Vinification

The best parcels were selected to pick these varieties from. Fermentation took place at 26-28* C, for 25 to 30 days in order to extract the tannins and aromas from grape skins. The aging took one year in American oak and afterwards best barrels were selected in order to give this perfect balanced cuvee. Tasting Notes Dark red in colour with aromas of black cherries. A well balanced wine with taste of plums with soft and delicate tannins giving its velvety aftertaste. Food Pairing May be associated with spicy dishes: stakes, grills and matured cheese. Serving Temperature: 18-20ËšC.

Vinification The vineyards where this Sauvignon Blanc comes from is situated on the very top of the hills at 400 m above sea level on a north facing vineyard. Here it is slightly cooler than any other part of our vineyards and with soils of sand and limestone which gives this wine some mineralogy. The Sauvignon Blanc grapes are handled very carefully during picking and sorting. Every care is taken to limit the exposure to oxygen during the pressing of the grapes. Only the free run is used to make this wine. Grape must is cooled and allowed to settle for 24 to 48 hours before racking off the sediments. After racking off the sediments, we inoculate with a yeast that will ferment at cold temperatures and will give us good herbaceous characteristics.

The wine is fermented at 10 to 14°C, the fermentation takes up to 4 weeks to complete. After fermentation the wine is left on the yeast lees for one month before we start to do the batonnage (mixing the yeast lees) which gives the wine more structure.

Tasting Notes

Yellow-green color with tropical fruit flavor, guava and passion fruit. It is a well balanced wine with fine acidity, felt pleasant in the mouth palace. Fresh and balanced, with a fruity character standing out on the aftertaste, which makes this wine an ideal company for dishes or a good appetizer.

Food Pairing

Chicken, seafood, cheese and pasta dishes. Serving temperature 10 -12ºC.

Vinification Particularities The grapes are picked up at their optimum level of maturity. Specially selected yeast is used to extract maximum aromas and flavours. The grapes are fermented for 15 to 25 days on the skins. The wine is matured in oak barrels to gain complexity and structure and it is aged in bottles for at least 4 months.

Tasting notes Dark Ruby in colour, a mixture of green pepper and spice on the nose, a mixture of blackberry and blackcurrant flavours with a good structure coming from natural tannins and oak tannins.

Food pairing Good with lamb, pork and beef. Serving temperature: 18-19°C

DETAILS: 

Otskhanuri Sapere grapes are not picked until late October or even mid-November. This wine when aged in oak casks, acquires a deep and elegant aroma as well as a rich and long finish. Otkshanuri sapere is considered to be Imereti’s best variety of red grape. Our Otskhanuri Sapere is made from the grapes grown in the best vineyards of Baghdati villages, Imereti.

WINE MAKING PROCESS: 

We pick the selected grapes at 20-22% of sugariness and 6-8 titratable acidity. After removing the stem and pressing, the fermentation proceeds in oak barrels, at 23-28°C degrees of temperature. A two-year ageing continues in the oak barrels; subsequently, the wine further ages in the bottles.

ORIGIN: Fetească Regală (or Royal Maiden in English) is the Royal grape exclusive to Romania. It is a cross between two grape varieties - Fetească Albă and Grasă de Cotnari and again originates from Transylvania. Regală has the aromatic quality of Fetească Albă but is a weightier grape with more body.

The Regală also has a citrusy edge to its character with lots of orange and lemony fruit. Fetească Regală works well with oak and can produce bigger wines with a slightly spicy finish.

WINE MAKING PROCESS: The harvested grapes were destemmed and given a soft pressing. The must was chilled to a temperature of 10° C to favour a natural static settling of impurities. After 48 hours the must went into stainless steel fermenting tanks, where it fermented at temperatures held to a maximum of 18° C and was then held in stainless steel tanks at a controlled temperature. The preparation of the wine for bottling in small lots helped conserve freshness and fragrance.

TASTING: Pale yellow with green tinges, this wine has a bouquet of fresh fruits, green apple in particular. Well balanced, fresh and semi-aromatic dry wine. It is recommended to be served at 8°C. Ideal with white meat dishes, fresh seafood or as an aperitif.
