Vinification
The grapes were allowed to reach their full maturity before picking. The grapes were crushed and placed in the press. Only the free run juice was used to make this wine. Each grape variety was fermented separately using a wild yeast strain for the first 48 hours of fermentation to give the wine more intensity of flavours and aromas. The Chardonnay was fermented in American oak barrels for seven months before it was blended with the Tamaioasa Romaneasca.
Tasting notes
Pale straw in colour, intense floral aroma with a hint of spice. Full-bodied white wine with complex flavours of floral and fruit with just a hint of oak on the finish giving this wine a lovely round and long finish.

Chicken, seafood, cheese and pasta dishes. Serving temperature: 10 - 12˚C

Vinification Particularities In order to preserve the intensity of flavours, the component wines from this cuvee were fermented at 10°C and to perfect the taste Chardonnay was kept in American oak barrels for six months.
Tasting Notes
Lively green colour, a mixture of summer flowers and honey flavours. Good structure in taste, fresh and a lovely acidity in good relation with the smooth oaky taste. Fresh summer fruits evolve on the finish. Food pairing Very good associated with fish and poultry dishes. Serving temperature: 10-12 ° C

Vinification Shiraz is a variety originar from France that has been exploited and promoted into the New World of the wine. Shiraz is well suited to the soils and climate of the Dealu Mare. The grapes are picked when they have reached their maximum maturity resulting a production of maximum 7 tones/hectar. Before fermentation the grapes are given 3 days cold soak on the skins at 10°C which gives this wine its fruity and spicy characteristics. Fermentation is carried out for 20 days at a maximum temperature of 28°C.
Tasting Notes This Shiraz has a beautiful dark purple colour with blackberry and black currant aromas and notes of spice. A mixture of fruit and black pepper on the palate, soft and well balanced wine with a long fruity aftertaste. 30% of this wine is aged in American oak barrels for six months before it is blended back with the rest of the wine.
Food Pairing Recommended with spicy dishes, stakes, sausages, grills and seasoned cheese. Serving temperature: 18-20˚C

Viticulture and Vinification
Good Sauvignon Blanc is characterized by zesty green flavors combined with tropical fruit notes. This is highlighted by the way the grapes are harvested for this wine. A part of the vineyard is harvested early for the crisp green style, a further part at mid maturity for a balanced component and then a final section is held until later to develop tropical/passion fruit characters to finish the blend. In the winery the processing is simple. Some parts are given some skin contact before pressing to extract more richness from the grape skins. All parts are fermented cool in stainless steel. Early bottling helps to seal in the freshness.Tasting notes
Straw yellow with greenish tints, good limpidity. Freshness with vegetable accents, black locust flowers, ripened fruits and melon, on a mineral background. Minerality confirmed by taste, sustained by good acidity, citric tint (lime), passion fruit. The well integrated alcohol sustains the structure of a wine marked by good taste dynamics and tonic notes.We recommend this wine with:
Green cheese, ewe-cheese, fish salads, caviar salad, Caprese salad, Bulgarian salad, chicken or turkey, pasta with pesto sauce, oven dishes (turkey, partridge), fish and desserts (tarts) with apricots, pears, apple pie.Serving temperature: 5°C - 8°C

ORIGIN:
Fetească Neagră (or Black Maiden in English) is an old native variety that originates from Moldova and Muntenia and again is capable of producing some great wines of deep colour although the vine needs constant care. The later the grapes are picked the better the results and a constant trimming programme to arrest the vigour produce excellent results. Fetească Neagră is a bramble fruited red with hints of soft cherry. It can vary greatly depending on terroir and oak influence, some can be earthy while others can boast flavours of cappuccino and vanilla.
WINE MAKING PROCESS:
The harvesting is done by hand, and at the same time a quality selection of grapes is being made. The maceration and the alcoholic fermentation take place in temperature controlled stainless steel tanks. It is still here that malolactic fermentation and maturation take place. Once the maturation period is complete, the wine is bottled.
TASTING:
Clear, bright, ruby red color, with violet and purple hues and fresh aromas of sour cherries, forest fruits and spices. Dry, well-balanced texture and acidity, pleasant astringency, rich tannins and intense finish. It is recommended to be served at 16˚C, along with red meat, small game, traditional Romanian red meat-based dishes, fresh cheeses.

Alb de Purcari – A sensual, slightly velvety experience that seduces your senses like a first love.
With a beautiful light golden color, the wine has a complex aroma of sweet fruits, with an aftertaste of fine honey notes with spices. The full fruity taste is balanced with ample but delicate accents of oak. The acidity is well defined and extends the remarkable aftertaste.

Made from grapes harvested and selected by hand, produced using traditional methods. Aged for 6 months in French oak barrique.

Dugladze Krakhuna 2017

We pick the selected grapes at 18-21% of sugariness and 7.5-8 titratable acidity. After removing the stem and de-pressing, we move the juice to the cleansing reservoir, keeping it there for 15-18 hours. Then, the clear juice is removed from the sediment and moved into fermentation reservoirs. We add the pure culture yeast. The fermentation proceeds at a low temperature of 12-15°C degrees.ORGANOLEPTICS:

Dugladze Kvareli AOC

WINE MAKING PROCESS:
We pick the selected grapes at 20-22% of sugariness and 6-8 titratable acidity. After removing the stem and de-pressing. fermentation proceeds at a 23-28°C in stainless steel reservoirs. We add the pure culture yeast. Following the 12-15 day maceration, we move the wine into 300 L French oak barrels for 9-12 month ageing.Legend of Dracula Cabernet Sauvignon 2017

ORIGIN: The wine is prepared entirely from grapes of Cabernet Sauvignon variety coming from the Dealu Mare which is the homeland of red wines in Romania, the seventh largest country producer of grapes in the world.
WINE MAKING PROCESS:
The grapes are sorted and de-stemmed and sent to the fermenter. The fermentation lasted several days. Vinification calls for the repeated punching down of the cap to maximize the extraction of the polyphonic compounds and colour components which will give the finished wine its distinctive style. When fermentation is over, the new wine is left in contact with the skins for a few more days to allow the alcohol to extract their finer tannins. The new wine is carefully drawn off into stainless steel vats for malolactic fermentation.
TASTING: Ruby red, with dominant aromas of red fruits. Taste of ripe black fruit, with delicate notes of vanilla, chocolate, pepper and cinnamon even in post taste. The fine structure and mild tannins make the wine easy to drink. It is recommended to be served at 15-18°C. It will be well suited with barbecue, pasta or cheese.
Legendary Dracula - Draculea Cabernet Sauvignon & Syrah 2017

The wine is prepared entirely from grapes of Cabernet Sauvignon and Syrah, varieties coming from the Dealu Mare which is the homeland of red wines in Romania, the seventh largest country producer of grapes in the world.
WINE MAKING PROCESS:
Grapes were harvested on the middle of September by hand. Alcoholic fermentation in closed tanks with gentle cap irrigator, extended skin contact for 21 days. Malolactic fermentation and maturation for in Romanian oak barrels.
TASTING:
Rich in black fruits – cherries, currants and berries, intense and elegant, completed by vanilla notes; excellent length and structure. It is recommended to be served at 16-18°C, alongside with braised short ribs, mushroom stroganoff, Moroccan lamb dishes, gnocchi with beef ragu.
