Vinification

The raw material for this authentic Romanian wine are Fetească Neagra grapes easiness picked from vines placed at the foot of  Macin Mountains, in cold mornings of  late autumn.

Tasting Notes

The wine is defined by the red colour with purple tints, richly textured bright and vivid cherry and blueberry fruit, spice and dark chocolate.

Food Pairing

Recommended with spicy dishes, stakes, sausages, grills and seasoned cheese. Serving temperature: 18-20˚C

Description

Merlot is a dry red wine, which flies the flag for Sarica-Niculiţel Vineyard. It has a purple hue, is astringent and tannic, imposing itself by the softness that only the finest wines have. The delicate scent and flavour are reminiscent of those of forest fruits. As it grows older, Merlot develops an aromatic bouquet and persistent aftertaste.

ORIGIN:

Zghihara is an authentic Romanian variety whose history begins many centuries before the phylloxera invasion. Its very name shows its belonging to the area of Moldavia, more precisely Huși because when we refer to this variety we can only say that it is zghihăț (zglobiu), it wins you over by its simplicity, but also by the refinement gained thanks to the care with which, at our Averești Estate, this variety is vinified. Zghiharei grapes are very resistant to frost, drought, manna, they ripen later, at the end of September, beginning of October, without a very high concentration of sugar, consequently the resulting wine rarely exceeds 12.5% alcohol by volume."
MAKING PROGRESS: Grapes were harvested in the morning until 10 o'clock, by hand with great care, at a sugar content of 195g/l., then destemmed without crushing. The grapes were cooled to a temperature of 10°C and then macerated in the press for 6 hours. The grapes were harvested by hand. The grapes were macerated at low temperatures, and the pressing was done cold. Fermentation of the must took place in stainless steel vessels at controlled temperatures. TASTING: Zghihară wine is a zghihăt (Playful) wine, where the high acidity blends very well with the full and refreshing taste in which we find fruity notes of green apple, gooseberries, but also vegetal traces of green bell pepper and fennel. The aftertaste is short to medium, mineral, with a citric and slightly bitter finish with traces of apricot kernels. Serve well chilled (8-10°C), it can be enjoyed at any time of the day, both as an aperitif and as an accompaniment to fish dishes, seafood, white meat, as well as dishes with soft-ripened cheeses.

The philosophy of the Busioaca wine from Domeniile Averești is not just any Busioaca, but the original, often imitated but never equaled, which has enjoyed the recognition of specialists and amateurs for decades (some say even centuries). In the Herb collection, you will find a Busuioaca for everyone! MAKING PROGRESS: Grapes were harvested by hand with great care, at a sugar content of at least 195g/l., then destemmed without crushing. The grapes were cooled to a temperature of 10°C and then macerated in the press for 6-8 hours. Maceration for 6 hours in presses, cold, at a temperature of 8-10°C, under inert gas protection. The resulting must is gravity-cleared at 12°C for 32 hours. Fermentation takes place in stainless steel tanks for 20 days at a temperature of 12-14°C. TASTING: Aromas of well-ripened basil and soft hints of rose. The palate has a balance of rose and grapefruit notes that outline the wine's fresh feel. Long, pleasant finish with sweet red fruit sensations. Serve chilled at 10-12⁰C with duck breast, chicken or duck liver, vanilla cream with fruit.

A philosophy of the Fetească Neagră & Busuioaca de Bohotin wine is a UNIQUE pairing that you will not find from any other producer, where the pairing of the two varieties creates an aromatic red wine with a full, joyful taste with rustic notes. MAKING PROGRESS: Grapes were harvested by hand with great care, at a sugar content of at least 195g/l., then destemmed without crushing. The grapes were cooled to a temperature of 10°C and then macerated in the press for 6-8 hours. Maceration of the Busuioaca de Bohotin variety was done in rotating tanks for 24 hours at a temperature of 8°C. Maceration - the fermentation of the Black Fetească grapes was carried out in macerators at a temperature of 21°C for 10 days, with a slight drop in temperature at the beginning, and then a slight increase in temperature towards the end. TASTING: Fresh wine with explosive aromas of berry and whipped cream notes, complemented by red fruits and fine earthy and truffle nuances. Full, cheerful palate with rustic notes ranging from fresh fruit to jammy tones. Fruity finish, well punctuated by pleasant acidity. Serve lightly chilled at 12-14⁰C, alongside beef or pork.

Decanting of the must was done gravitationally, cold. The must was fermented in stainless steel tanks at a controlled temperature, and the young wine obtained was kept on fine lees storage until March to gain structure and volume. TASTING: Pleasant but discreet aromas of green apples, lime, and gooseberries. Lively, fresh, and fruity, with light hints of marjoram and a mineral aftertaste, this is your everyday wine. Vinification particularities Busuioaca de Bohotin is a very picky grape variety that is grown and vinified with difficulty. In Budureasca vineyards it was planted on an area that offers an important number of hours in the sun to be protected from diseases that occur due to moisture . An elegant and well balanced wine, obtained from grapes cultivated on 6 ha of old vineyard. After being pressed, the grapes had a low-temperature fermentation for 3-4 weeks, to keep natural sugars, which provides harmony between the variety flavors and sweetness. Tasting Notes Pale pink color and aromas of raspberries and wild strawberries with fine notes of roses. The taste is fresh, balanced, with rose petal flavor and a fruity finish. Food pairing It may be associated with desserts based on fruits, cheese or chocolate. Serving temperature: 10-12˚C.
