DETAILS: This wine produced since 1942, is the nation's leading semi-sweet red wine, in terms of quantity and individuality. Just one sip of our company's Kindzmarauli is enough to remember if forever. The peculiarity of soil consisting of remnant black shale plays major role in the taste. This black shale washed down by the Duruji river has a high propensity to retain heat, which by increasing the temperature of the soil also increases the sweetness of the grapes and the quality of the wine.

WINE MAKING PROCESS

We pick the selected grapes at 24-26% of sugariness and 75-8 titratable acidity. After removing the stem and de-pressing the clear juice is removed from the sediment and moved into fermentation reservoirs. We add the pure culture yeast. The fermentation proceeds at a low temperature of 18-22°C. As soon as the sugar level goes down to 7-5% during the fermentation, we cool it down to 3 degrees to stop fermentation and store it at -2-3°C degrees after filtration.

ORIGIN:

The Negru de Dragasani grape variety was obtained at the Dragasani viticulture research station through individual selection. It is a hybrid, officially recognized in 1993, between the Negru Vartos and Saperavi varieties (a native grapevine from Georgia, commonly used in blends to produce high-quality red wines). The grape has a black-blueish color, with red-colored, juicy, non-aromatic pulp and a straightforward taste. Wines produced from this variety are dry, more robust, strikingly red, with flavors and aromas of black cherries, sour cherries, blueberries, blackberries, and spices. They are suitable for aging in oak barrels and subsequently in bottles. TASTING: With its mesmerizing ruby red color, this wine reveals dominant aromas of red fruits in its bouquet. The taste is a delightful harmony, featuring well-balanced notes of ripe tannins, along with delicate hints of vanilla, chocolate, and pepper. ORIGIN

The wine is prepared entirely from grapes of Merlot and Pinot Gris variety coming from the Dealu Mare which is the homeland of red wines in Romania, the seventh largest country producer of grapes in the world.

WINE MAKING PROCESS

The grapes were harvested manually, destemmed, and the chill cooled immediately before pressing. Getting the wort was done by rapid draining from the press without maceration. The must has been statically discharged at 10° C, and then sent to controlled fermentation in stainless steel containers. The fermentation temperature was 16° C. TASTING:

Pink salmon. Expressive nose, with elegant tints of pomegranate and red fruits. Complex taste, fresh, with a long and very pleasant aftertaste. It is recommended to be served at 8-10°C. A very food-friendly wine, it pairs well as an aperitif or with seafood, salads, grilled fish and chicken.

ORIGIN:

The wine is prepared entirely from grapes of Busuioaca de Bohotin variety, a grape which originates from the Bohotin region, in Southeast Iaşi County, Romania, the seventh largest country producer of grapes in the world. Busuioaca is a liqueur wine with a special body, with an unmistakable fragrance, a mixture of rose and basil giving it a special note, rarely found in other aromatic wines. Its aroma is unique, bringing honeysuckle and peach ripe, succulent, with perfect harmony of sugar, alcohol and acidity. Sweet taste sometimes has a bitter sensuous taste of almonds.

WINE MAKING PROCESS:

Harvesting at the optimum time, maceration for 24 hours under the action of enzymes to extract flavor and color at 10°C. It follows the pressing stage where only the ravac must is collected in order to obtain this wine, flotation and sowing with selected yeasts for alcoholic fermentation. Fermentation is done at 16-17°C in stainless steel vessels under controlled temperature.

TASTING:

Salmon pink, with intense, floral aromas, scent of rose petals. Fruity and aromatic taste, well-integrated acidity, delicate basil aftertaste. It is recommended to be served at 7-8° C. One may serve it along with dark chocolate desserts, truffles, pastries, foie gras.

Viticulture and Vinification

Mature grapes from the best parts of the vineyard are used for this wine, Selene is only made in exceptional years. It reflects what is possible in red wines from Recas and the emphasis is on smoothness and harmony. This is created from the start by using extra ripe grapes which have softer, “sweeter” tannins from the vineyard. These are then further refined by careful application of oxygen during the fermentation and early stages of maturation. The controlled oxygen exposure causes polymerization of the tannins and red colouring to give a smoother mouth feel and better harmony.

Tasting notes

Its colour is cherry red, purplish reflections and very good limpidity. Aromas of red and black fruits (blackberry, black currant, sour cherry), slightly grassy after aeration (fern). The good interaction with oak wood is felt, the wine opens nicely, with complex perfumes of vanilla and cinnamon. Interesting ending with tints of leather and hot spice (green pepper). Very good acidity, quick attack, dynamic tannins, equally velvety and round, with hot ending and lasting aftertaste. Vegetal aromas and especially intense aromas of fruits, weaved with brown sugar.

We recommend this wine with:

Beef tartare, veal, duck, Pfeffersteak, boar meat cooked over the embers, mouldy cheese, chocolate mousse.

Selene Syrah

Viticulture and Vinification

Syrah is made from grapes which are part of the yield control strategy adopted in the vineyard. Syrah vines have a tendency to overcrop which can lead to thin wines if not controlled. At Cramele Recas, this is done by removing a portion of the grapes soon after flowering, before the vine has started to swell them into grapes. Thereafter the emphasis is on fully ripening of the remaining grapes to ensure generous flavor and deep color. The in-winery handling of Syrah is basic and relies on simple processes to preserve the grape flavor and keep the wines open and agreeable. 1 year aged wine in barique and unfiltered with a potential of aging in bottles minimum 10 years.

Tasting notes

Purple red with violet reflections, good limpidity. Intense aromas of red fruits (sour cherries, blueberries, black currants), floral aromas (violets). High acidity, medium body, young and ripened tannins, a velvety wine with integrated alcohol and an intense ending. Balance between aromas, alcohol and tannins.

We recommend this wine with:

Cheeses with caraway, salad with sun-dried tomatoes, veal Carpaccio, barbecue, red tuna, desserts with red fruits, walnuts, almonds,currants.
