Vinification
The raw material for this authentic Romanian wine are Fetească Neagra grapes easiness picked from vines placed at the foot of Macin Mountains, in cold mornings of late autumn.
Tasting Notes
The wine is defined by the red colour with purple tints, richly textured bright and vivid cherry and blueberry fruit, spice and dark chocolate.
Food Pairing
Recommended with spicy dishes, stakes, sausages, grills and seasoned cheese. Serving temperature: 18-20˚C

A philosophy of the Fetească Neagră & Busuioaca de Bohotin wine is a UNIQUE pairing that you will not find from any other producer, where the pairing of the two varieties creates an aromatic red wine with a full, joyful taste with rustic notes. MAKING PROGRESS: Grapes were harvested by hand with great care, at a sugar content of at least 195g/l., then destemmed without crushing. The grapes were cooled to a temperature of 10°C and then macerated in the press for 6-8 hours. Maceration of the Busuioaca de Bohotin variety was done in rotating tanks for 24 hours at a temperature of 8°C. Maceration - the fermentation of the Black Fetească grapes was carried out in macerators at a temperature of 21°C for 10 days, with a slight drop in temperature at the beginning, and then a slight increase in temperature towards the end. TASTING: Fresh wine with explosive aromas of berry and whipped cream notes, complemented by red fruits and fine earthy and truffle nuances. Full, cheerful palate with rustic notes ranging from fresh fruit to jammy tones. Fruity finish, well punctuated by pleasant acidity. Vinification This Feteasca Neagra is made from vines which are over 30 years old. The grapes are only picked when they have reached their full maturity.The grapes are fermented for 8 to 12 day at a maximum temperature of 29°C to extract its intense colour. 40% of the wine is placed in oak barrels for up to 6 months after which it is blended.
Tasting notes Dark purple in colour with a mixture of spice and black forest fruits. Complex flavours of fruit and spice with soft tannins give this wine its lovely velvety finish.
Food pairing Barbecued meat and rich pasta sauces. Serving temperature:18-20˚C

Vinification particularities
In 2022 the winemaking team decided to try the wild indigenous yeast from our vineyards on 6 tonnes of the first harvested Fetească Neagră. The grapes came from a vineyard 200 metres above sea level on chernozem, sand and gravel soils.
Tasting notes
This unique wine is vibrant deep red in colour, with an abundant aroma of black forest fruits. A concentrated wine with beautifully integrated tannins, gorgeous ripe blackberry flavours with a hint of wild herbs giving this wine a lovely, silky texture on the finish.Food pairing
It is ideal to be paired with pork dishes and pasta with tomato sauce.

Viticulture and Vinification
Feteascã Neagrã grapes are fermented on skins for 5-7 days. They are pressed while still slightly sweet and the final amount of sugar which remains later ferments out off-skins. The timing of pressing is used to control the quality of the tannins extracted into the final wine. Too much time would leave a wine without fruit and dried out, too little, and some of the vital important flavour and color could be left behind in the skins.Tasting notes
Light lavender red, good limpidity. Dense aromas of slightly dried plums (glazed), sour cherries. Medium attack, a velvet wine with good acidity, reduced and pleasant tannins and slightly bitter finish that helps salivation and resuscitates the aromas on the tongue.We recommend this wine with:
Semi-hard cheeses, Romanian snacks (meatballs, sausages, stuffed aubergines), chicken ragout, Moldavian tochitura, roasted or grilled pork, plum dumplings.Serving temperature: 14°C - 16°C

ORIGIN:
Fetească Neagră (or Black Maiden in English) is an old native variety that originates from Moldova and Muntenia and again is capable of producing some great wines of deep colour although the vine needs constant care. The later the grapes are picked the better the results and a constant trimming programme to arrest the vigour produce excellent results. Fetească Neagră is a bramble fruited red with hints of soft cherry. It can vary greatly depending on terroir and oak influence, some can be earthy while others can boast flavours of cappuccino and vanilla.
WINE MAKING PROCESS:
The harvesting is done by hand, and at the same time a quality selection of grapes is being made. The maceration and the alcoholic fermentation take place in temperature controlled stainless steel tanks. It is still here that malolactic fermentation and maturation take place. Once the maturation period is complete, the wine is bottled.
TASTING:
Clear, bright, ruby red color, with violet and purple hues and fresh aromas of sour cherries, forest fruits and spices. Dry, well-balanced texture and acidity, pleasant astringency, rich tannins and intense finish. It is recommended to be served at 16˚C, along with red meat, small game, traditional Romanian red meat-based dishes, fresh cheeses.
