Academia Saperavi whispers the story of one of the most important human virtues that underlies any creation - patience. Academia Saperavi 2019 contains a very limited number of bottles - 6000, because just so long ago the first practices for the use of amphorae in winemaking were recorded in Georgia, the homeland of this variety. TASTING NOTES:
Negru de Purcari is the king of red wines – noble, with a rich structure and a perfect bouquet.
The scarlet red color is characterized by a complex and intense bouquet, with notes of sweet fruits – ripe plums and figs – which develop over time, coupled in the end with fine flavors of spices and saffron. Deep and velvety taste reminds of the same fruit flavor with ample hints of delicate tannins and a long sensual aftertaste.
VINIFICATION
70% Cabernet-Sauvignon, 25% Saperavi, 5% Rara Neagră
Made from grapes harvested and selected by hand, produced using traditional methods. Aged for 18 months in French oak barrique.
FOOD PAIRING
Noble ripened cheeses; baked deer roulade filled with figs; roulade of pheasant with chestnut puree.
Decant for 30 minutes before serving.
Recommended serving temperature: +18…+20 °С.

TASTING NOTES:
Freedom Blend is the expression of the free spirit, a courageous blend, full of character, from three indigenous grape varieties. It has the heart of Georgia, the terroir of Moldova, and the free spirit of Ukraine.
The intense ruby color and almond accents produce a complex bouquet dominated by cherries, blackberries, and currants, complemented by dried plums, red pepper, and savory notes of moist wood and leather. The full and fruity taste captures the elegance and refinement, and gives a velvet aftertaste.
VINIFICATION
Grape varieties: 60% Bastardo, 35% Saperavi, 5% Rară Neagră
The wine is aged for 12 months in French oak barrique.

We pick the selected grapes at 24-26% of sugariness and 75-8 titratable acidity. After removing the stem and de-pressing the clear juice is removed from the sediment and moved into fermentation reservoirs. We add the pure culture yeast. The fermentation proceeds at a low temperature of 18-22°C. As soon as the sugar level goes down to 7-5% during the fermentation, we cool it down to 3 degrees to stop fermentation and store it at -2-3°C degrees after filtration. ÂDugladze Krakhuna 2017

Then, the clear juice is removed from the sediment and moved into fermentation reservoirs. We add the pure culture yeast. Saperavi is one of the top red varieties in Georgia and worldwide. It has been noted by a number of foreign scientists and wine masters, that our famous Saperavi is the variety of the future. promising an entirely different taste outlook to the world. Our Saperavi is made from the best, selected grapes in Kakheti, using the traditional qvevri method.
WINE MAKING PROCESS: We pick the selected grapes at 20-22% of sugariness and 6-8 titratable acidity. After removing the stem and pressing, we ferment our wine at 23-28°C degrees in the Qvevri. After the fermentation is complete, we remove skin and leave the wine in Qvevri till February-March.
