ORIGIN:

Tămâioasa Românească wine is to produce a Romanian variety whose aromatic white wine is vinified in demidulce both to apply the aromas of lime and acacia, and to offer a pleasant experience to those who choose this wine. MAKING PROGRESS: Grapes were harvested in 2 stages, characterized by different levels of ripening/ripening. Grapes were mechanically harvested. Grapes were macerated at low temperatures and cold pressed. Fermentation of the must took place in stainless steel vessels at controlled temperatures. TASTING: This Tămâioasa Românească is an amber-colored wine with lovely aromas of melon, jasmine, and elderberry. The taste is pleasant and long, with hints of walnut kernel and polyfloral honey. Serve well chilled (8-10⁰C) and pair it with meat dishes, caramelized vegetables, and desserts.

Vinification

The grapes were allowed to reach their full maturity before picking. The grapes were crushed and placed in the press. Only the free run juice was used to make this wine. Each grape variety was fermented separately using a wild yeast strain for the first 48 hours of fermentation to give the wine more intensity of flavours and aromas. The Chardonnay was fermented in American oak barrels for seven months before it was blended with the Tamaioasa Romaneasca.

Tasting notes

Pale straw in colour, intense floral aroma with a hint of spice. Full-bodied white wine with complex flavours of floral and fruit with just a hint of oak on the finish giving this wine a lovely round and long finish.

Food pairing

Chicken, seafood, cheese and pasta dishes. Serving temperature: 10 - 12˚C

Tasting notes Gold yellow in color, with specific flavors of elderflowers and passion fruit. A full-bodied wine, with pleasant flavor of fruits and flowers and fresh acidity that give to this wine a long and soft finish.

ORIGIN Fetească Albă (or White Maiden in English) is the most widely planted white grape in Romania and regarded by many winemakers in Romania as the white indigenous grape with the most potential. Usually off dry it is capable of producing dessert wines of exceptional quality. Intensely aromatic (think Gewurztraminer) Fetească Albă is a highly perfumed wine with hints of stone peaches, apricots and a floral bouquet. The variety dates back to the 1930’s from Transylvania but now flourishes across Romania. WINE MAKING PROCESS Harvesting is done manually at the beginning of September from a vineyard at the base of the slope with exhibition south-west. Vinified in stainless steel tanks with controlled temperature at 16°C, with subsequent maturation on lees. WINEMAKER: When Count Guy de Poix established SERVE in 1994 he was already familiar with the art of wine making, as Guy produces one of the finest wines in Corsica – Domaine Peraldi. Surrounded by an enthusiastic team, Dealu Mare is proving a sound choice for creating quality wines for Legendary Dracula. TASTING Clear, bright, green-yellow with fresh aromas of citrus and plum tree flowers, floral notes. Dry, medium-bodied, fresh and crispy, with pomelo and slightly unripe apricot notes, well-balanced medium length finish. One may serve it as an aperitif or with white meat dishes (fish, chicken) or other “light” summer dishes, such as pasta, salads or fresh cheeses. Best served at 12-13˚C.

ORIGINTămâioasă Românească, described by Jancis Robinson as the ‘frankincense grape’ due to its aroma, is one of the ancient varieties of Romania. Romanians love the versatility of the grape, it can be fermented dry which produces amazing results or up to and over 150g/l of residual sugar.

A version of Muscat Blanc a petits grains, the variety naturally sweet does exceptionally well in the Dealu Mare region with its stony soils. One to watch!

WINE MAKING PROCESS

The grapes are destemmed and slightly crushed, followed by 6 – 8 hours of skin contact in the closed press at 8˚C. Alcoholic fermentation occurs in stainless steel during a period of 14 days at controlled temperature of about 13-14°C.

TASTINGPale yellow, with delicious notes of exotic fruits (pineapple, pomelo). Dry, the flavors of ripe papaya are intense, well supported by robust structure and balanced acidity giving the wine amplitude and length. It is recommended to be served at 10-12˚C. One may serve it as an aperitif or with salads, seafood, grilled white fish.

ORIGIN

Tamaioasa Romaneasca, described by Jancis Robinson as the ‘frankincense grape’ due to its aroma, is one of the ancient varieties of Romania. Romanians love the versatility of the grape, it can be fermented dry which produces amazing results or up to and over 150g/l of residual sugar. A version of Muscat Blanc a petits grains, the variety naturally sweet does exceptionally well in the Nicoresti area, Moldova region.

WINE MAKING PROCESS

The grapes were picked by hand, de-stemmed and then left to macerate on skins in stainless steel winemakers, at a temperature of 10° for 24 hours to extract the best possible aroma. The must extracted from the pneumatic press was clarified by gravity, in cold temperature. The clear must was fermented with selected yeasts at a temperature of 14-15° for a period of 18 days. A first fermentation took place, the coarse yeast being extracted. The wine was left at a controlled temperature of 14-16°, and batonnage was made on fine yeasts for 3 weeks. After batonnage, the wine was bentonized, filtered and prepared for bottling. TASTING:

Pale yellow, with intense flavours of elderberry, peaches and ripe pears, an explosion of aromas starting from incence to pink grapefruit. It is recommended to be served at 8-10˚C. One may serve it Asian, Lebanese, Indian food.

This is a desert wine, made from late harvest grapes only in the favorable years of sugar accumulation and noble rot setting. TASTING: Bright yellow color, with an intense aromas of lovely aromatics, roses, basil and yellow melon. Delicious honey sweetness, rich and balanced by good acidity. It is recommended to be served at 6-8°C, along with foie gras, pastry and sweets or alongside with Asian food.
