Angel’s Estate Stallion Classic ( 60% Cabernet Sauvignon; 20% Cabernet Franc; 10% Merlot; 10% Syrah )
Hand sorting of whole destemmed grapes. Cold maceration at 8ºС in oak barrels of 6 t each and heat-insulated stainless steel wine fermentation tanks of 7000 l each. Controlled alcoholic fermentation with post-fermentation maceration. Spontaneous malolactic fermentation in new French barrels. Aging and storage for 10 months in new French oak barrels of 225l each at controlled temperature and relative air humidity
