Hand picking and sorting of grapes, as well as picking through the destemmed grapes to select out the best. Direct inert pressing of whole destemmed grapes up to 1, 2 Bar. Cold enzyme clarification and fermentation with pure culture wine yeasts. Batches coupage, clarification and stabilization.
