Vinification particularities
In 2022 the winemaking team decided to try the wild indigenous yeast from our vineyards on 6 tonnes of the first harvested Fetească Neagră. The grapes came from a vineyard 200 metres above sea level on chernozem, sand and gravel soils.
Tasting notes
This unique wine is vibrant deep red in colour, with an abundant aroma of black forest fruits. A concentrated wine with beautifully integrated tannins, gorgeous ripe blackberry flavours with a hint of wild herbs giving this wine a lovely, silky texture on the finish.Food pairing
It is ideal to be paired with pork dishes and pasta with tomato sauce.

Vinification particularities
The grapes are harvested at their full potential so that wine gains intense aromas and mineral properties. It is fermented at about 14°C for two weeks. In the process of fermentation the wine is left on the lees applying the technique called batonaj (mixing yeasts in the wine mass to achieve structure and softness). Tasting notes
Pale straw in colur with aromas of queens jam. A wine with clean acidity, well balanced with ripe queens flavours.
Food pairing
Can be paired with fish, seafood, grilled vegetables and mushrooms. Serving temperature: 10-12˚C.

Viticulture and Vinification
Cabernet grapes are fully destemmed and crushed before going to 50.000 litres stainless steel fermenters. All are seeded with known and trusted yeast cultures to produce a reliable fermentation. Temperatures up to 28°C are employed when on skins to achieve full extraction of colour and flavor from the skins. Temperature is controlled through out these 5 - 6 days of on-skins fermentation before pressing. The heavy pressings fractions are not used in Castel Huniade wines.Tasting notes
Intense red with violet reflections. Intense aromas of blackberries (currants), with mineral aspect. Medium attack, good acidity, good body, young and active tannins, slightly vegetal, with an easy spicy aftertaste.We recommend this wine with:
Smoked hard cheese, moldy cheese, cow goulash, Moldavian tochitura,medium and large game, veal, duck. Desserts with chocolate cream and red fruits.Serving temperature: 14°C - 16°C

ORIGIN:
Fetească Neagră (or Black Maiden in English) is an old native variety that originates from Moldova and Muntenia and again is capable of producing some great wines of deep colour although the vine needs constant care. The later the grapes are picked the better the results and a constant trimming programme to arrest the vigour produce excellent results. Fetească Neagră is a bramble fruited red with hints of soft cherry. It can vary greatly depending on terroir and oak influence, some can be earthy while others can boast flavours of cappuccino and vanilla.
WINE MAKING PROCESS:
The harvesting is done by hand, and at the same time a quality selection of grapes is being made. The maceration and the alcoholic fermentation take place in temperature controlled stainless steel tanks. It is still here that malolactic fermentation and maturation take place. Once the maturation period is complete, the wine is bottled.
TASTING:
Clear, bright, ruby red color, with violet and purple hues and fresh aromas of sour cherries, forest fruits and spices. Dry, well-balanced texture and acidity, pleasant astringency, rich tannins and intense finish. It is recommended to be served at 16˚C, along with red meat, small game, traditional Romanian red meat-based dishes, fresh cheeses.

ORIGIN:
Fetească Regală (or Royal Maiden in English) is the Royal grape exclusive to Romania. It is a cross between two grape varieties - Fetească Albă and Grasă de Cotnari and originates from Transylvania. Regală has the aromatic quality of Fetească Albă but is a weightier grape with more body. The Regală also has a citrusy edge to its character with lots of orange and lemony fruit. Fetească Regală works well with oak and can produce bigger wines with a slightly spicy finish.
WINE MAKING PROCESS:
The harvested grapes were destemmed and given a soft pressing. The must was chilled to a temperature of 10° C to favour a natural static settling of impurities. After 48 hours the must went into stainless steel fermenting tanks, where it fermented at temperatures held to a maximum of 18° C and was then held in stainless steel tanks at a controlled temperature. The preparation of the wine for bottling in small lots helped conserve freshness and fragrance.
TASTING:
Pale yellow with green tinges, this wine has a delicat bouquet of white flowers, fresh grass and lemon. Taste of ripe green apples, lime and grapefruit, full fo freshness and long aftertaste. It is recommended to be served at 8-10°C. Ideal with white meat dishes, salads or as an aperitif.

ORIGIN:
The wine is prepared entirely from grapes of Merlot variety coming from the Dealu Mare which is the homeland of red wines in Romania, the seventh largest country producer of grapes in the world.
WINE MAKING PROCESS:
Manual harvesting, de-stemming and very gentile crushing, the must is pumped into temperature controlled stainless steel tanks where it is seeded with yeasts to complete the alcoholic fermentation, followed by controlled malolactic fermentation. maturing period in stainless steel tank for 12 month.
TASTING:
Purple red. Aromas of raspberries, cherries, topped with notes of barrel, coconut and cigar smoke. Balanced taste, complex and explosive, with a long and fragrant aftertaste. It is recommended to accompany pork grilled or lamb. Best served at 13-15˚C.

WINE MAKING PROCESS:
The grapes were harvested at full maturity. The grapes are destemmed and slightly crushed, followed by 6 – 8 hours of skin contact in the closed press at 8˚C. Alcoholic fermentation was carried out in the presence of selected yeasts at a temperature of 12-14 ° C for 14-21 days.
TASTING:
Pale pink, with a bouquet of red berries and exotic notes of mango. Pleasant aromas of ripe strawberries, sweet cherries with a fresh aftertaste. It is recommended to be served at 10-12˚C. One may serve it with salads, seafood, grilled fish and chicken.

WINE MAKING PROCESS:
The varieties are vinified separately through a careful processing technology from grapes to bottled wine. Direct pressing with pneumatic technology at max. 1 bar followed by deburring - cold storage for 48 hours. The vinification is oriented towards the “zero-zero” principle of use of adjuvants, being a precision vinification that allows use of very low doses of SO2. It is also respected the principle of a “simplified” vinification, in which the interventions on must and wine are kept to a minimum. Alcoholic fermentation in 100 hl stainless steel thermostated at 10-12°C, with yeasts selected for each variety separately. Matured on fine yeasts for 24 weeks in stainless steel pots.
TASTING:
Greenish yellow, intense and persistent bouquet, floral with slight mineral hints. It is fresh, fruity, well balanced, ample and persistent aftertaste. One may serve it as an aperitif or with fish, seafood, chicken. Best served at 12-13˚C.

ORIGIN: Tămâioasă Românească, described by Jancis Robinson as the ‘frankincense grape’ due to its aroma, is one of the ancient varieties of Romania. Romanians love the versatility of the grape, it can be fermented dry which produces amazing results or up to and over 150g/l of residual sugar.
A version of Muscat Blanc a petits grains, the variety naturally sweet does exceptionally well in the Dealu Mare region with its stony soils. One to watch!
WINE MAKING PROCESS:
The grapes are destemmed and slightly crushed, followed by 6 – 8 hours of skin contact in the closed press at 8˚C. Alcoholic fermentation occurs in stainless steel during a period of 14 days at controlled temperature of about 13-14°C.
TASTING: Pale yellow, with delicious notes of exotic fruits (pineapple, pomelo). Dry, the flavors of ripe papaya are intense, well supported by robust structure and balanced acidity giving the wine amplitude and length. It is recommended to be served at 10-12˚C. One may serve it as an aperitif or with salads, seafood, grilled white fish.

The wine is prepared entirely from grapes of Cabernet Sauvignon & Merlot & Feteascã Neagrã, varieties coming from the vineyards located in Dealu Mare region - Romania, the seventh largest country producer of grapes in the world.
WINE MAKING PROCESS:
The varieties are vinified separately according to a classic fermentation technology pumpkin in stainless steel vessels of 150 Hl at 24-26 C, for 19 days at Merlot, 23 days at Cabernet and 16 days at Feteascã Neagrã. Malolactic fermentation completed immediately after the alcoholic one. Matured for 8 months on a fine deposit yeasts in the following percentages: 30% in stainless steel pots and 70% in barique de Romanian oak in the second cycle of use.
TASTING:
Intense ruby with purple hues, spicy with notes of green pepper, dried fruit. A well balanced and armonious wine, with a persistent finish. It is reccommended to be served at the temperature of 16-18°C, accompanied by red meat, venison and matured cheese.

WINE MAKING PROCESS:
Grapes harvested manually from plantations established in 2003-2004, in third top of the slope, the slope of 25-40%, with southern exposure. 40% of the amount was vinified in concrete pots, then this amount being matured for eight months in French wooden barrels of 1-3 years, the other amount was matured in stainless steel tanks. Assembly was made after maturation.
TASTING:
Clear, intense red with violet hues, intense spices aromas (black pepper), vanilla and notes of guince and ripe red fruits. Dry, full-bodied and well-balanced, with soft tannins and aromas of red fruit (blackberries and blueberries), with a persistent finish. It is reccommended to be served at the temperature of 17-18°C. One may serve it with red meat dishes (lamb, beef, venison), spicy dishes and matured cheese.
