Tămâioasa Românească wine is to produce a Romanian variety whose aromatic white wine is vinified in demidulce both to apply the aromas of lime and acacia, and to offer a pleasant experience to those who choose this wine. MAKING PROGRESS: Grapes were harvested in 2 stages, characterized by different levels of ripening/ripening. Grapes were mechanically harvested. Grapes were macerated at low temperatures and cold pressed. Fermentation of the must took place in stainless steel vessels at controlled temperatures. TASTING: This Tămâioasa Românească is an amber-colored wine with lovely aromas of melon, jasmine, and elderberry. The taste is pleasant and long, with hints of walnut kernel and polyfloral honey. Serve well chilled (8-10⁰C) and pair it with meat dishes, caramelized vegetables, and desserts.

ORIGIN:

The philosophy of AVEREȘTI wine is the key word that designates not just any Busuioaca, but only the original one, which has enjoyed the recognition of specialists and amateurs for decades (some say even centuries). The Busuioaca grapes here have found the best soil and climate conditions to express themselves tastefully and aromatically in a unique way - often imitated but never equalled. Here, at Averești, through the careful cultivation of several biotypes of Busuioaca, seductive wines are born with freshness, intensity of taste, and quality of aromas that set the benchmark for this variety.
MAKING PROGRESS:
Grapes were harvested in the morning until 10 o'clock, by hand with great care, at a sugar content of 195g/l., then destemmed without crushing. The grapes were cooled to a temperature of 10°C and then macerated in the press for 6 hours. After gravity settling for 24 hours, the must was fermented in 2000L vessels at 12°C for 18 days.
TASTING:
Fresh aromas of rose and basil. Appetizing taste of ripe citrus and rose sweetness. Long, memorable finish. Serve very well chilled (8°C) accompanied by music, dancing, and lots of friends. The high concentration of sugar amplifies the flavors, making this wine an excellent dessert or accompaniment, but also a companion for dishes with sweet and sour sauce.

The story of Busuioacea de Bohotin is lost in the mists of time, it is said to be thousands of years old, that it was the wine of Stephen the Great, that there was very little of it originally, just a few dozen butts, and that very little wine was made and only brought out at special events, which made it memorable, unmemorable. We propose you to have a memorable experience with this wine and enjoy the flavors that have delighted important personalities in the history and culture of Romania and beyond.
MAKING PROGRESS: Grapes were harvested by hand with great care, at a sugar content of at least 195g/l., then destemmed without crushing. The grapes were cooled to a temperature of 10°C and then macerated in the press for 6-8 hours. The must is obtained in a controlled atmosphere using a short, low-pressure pressing cycle. Decanting of the must was done gravitationally, cold. The must was fermented in temperature-controlled stainless steel tanks. TASTING: Its name comes from the strong basil flavors that the wine enjoys and the area where it was discovered. The aroma of the native rose Busuioaca de Averești is intense, a delicate blend of notes of wild flowers, roses, and ripe citrus - making this wine a "ballet of tastes." Serve well chilled (8-10⁰C), good to pair with sweet and sour dishes and desserts: cakes, muffins, cakes.

Vinification particularities Busuioaca de Bohotin is a very picky grape variety that is grown and vinified with difficulty. In Budureasca vineyards it was planted on an area that offers an important number of hours in the sun to be protected from diseases that occur due to moisture . An elegant and well balanced wine, obtained from grapes cultivated on 6 ha of old vineyard. After being pressed, the grapes had a low-temperature fermentation for 3-4 weeks, to keep natural sugars, which provides harmony between the variety flavors and sweetness. Tasting Notes Pale pink color and aromas of raspberries and wild strawberries with fine notes of roses. The taste is fresh, balanced, with rose petal flavor and a fruity finish. Food pairing It may be associated with desserts based on fruits, cheese or chocolate. Serving temperature: 10-12˚C.

Viticulture and Vinification

100% estate grown, handpicked grapes from our Gipsy Hill and Uberland Hill vineyards were gentle destemmed and crushed into stainless steel automated maceration/fermentation tanks and fermented for 2 weeks at 25 ◦C. Gently pressed while still fermenting, the juice is then cooled to -2° C to stop the fermentation with residual sugar and blended also with some dry wine that has been aged on oak staves for 3 months.

Tasting notes

Soft and inviting, with a dense core of chocolate cake, cherry and dusky spice flavours that sprawl over a layer of supple tannins. It all melds together on the finish, shooting off sparks of vanilla and raspberry.

We recommend this wine with:

Dark Chocolate mousse or Forest fruit flan.

Serving temperature: 14°C - 16°C

This black shale washed down by the Duruji river has a high propensity to retain heat, which by increasing the temperature of the soil also increases the sweetness of the grapes and the quality of the wine.

WINE MAKING PROCESS

We pick the selected grapes at 24-26% of sugariness and 75-8 titratable acidity. After removing the stem and de-pressing the clear juice is removed from the sediment and moved into fermentation reservoirs. We add the pure culture yeast. The fermentation proceeds at a low temperature of 18-22°C. As soon as the sugar level goes down to 7-5% during the fermentation, we cool it down to 3 degrees to stop fermentation and store it at -2-3°C degrees after filtration.

Then, the clear juice is removed from the sediment and moved into fermentation reservoirs. We add the pure culture yeast. The fermentation proceeds at a low temperature of 12-15°C degrees. As soon as the sugar lavel goes down to 7-5% during the fermentation, we cool it down to 3 degrees to stop fermentation and store it at -2-3°C degrees after filtration.

ORIGIN:

The wine is prepared entirely from grapes of Busuioaca de Bohotin variety, a grape which originates from the Bohotin region, in Southeast Iaşi County, Romania, the seventh largest country producer of grapes in the world. Busuioaca is a liqueur wine with a special body, with an unmistakable fragrance, a mixture of rose and basil giving it a special note, rarely found in other aromatic wines. Its aroma is unique, bringing honeysuckle and peach ripe, succulent, with perfect harmony of sugar, alcohol and acidity. Sweet taste sometimes has a bitter sensuous taste of almonds.

WINE MAKING PROCESS:

Harvesting at the optimum time, maceration for 24 hours under the action of enzymes to extract flavor and color at 10°C. It follows the pressing stage where only the ravac must is collected in order to obtain this wine, flotation and sowing with selected yeasts for alcoholic fermentation. Fermentation is done at 16-17°C in stainless steel vessels under controlled temperature.

TASTING:

Salmon pink, with intense, floral aromas, scent of rose petals. Fruity and aromatic taste, well-integrated acidity, delicate basil aftertaste. It is recommended to be served at 7-8° C. One may serve it along with dark chocolate desserts, truffles, pastries, foie gras.
