Vinification The vineyards where this Sauvignon Blanc comes from is situated on the very top of the hills at 400 m above sea level on a north facing vineyard. Here it is slightly cooler than any other part of our vineyards and with soils of sand and limestone which gives this wine some mineralogy. The Sauvignon Blanc grapes are handled very carefully during picking and sorting. Every care is taken to limit the exposure to oxygen during the pressing of the grapes. Only the free run is used to make this wine. Grape must is cooled and allowed to settle for 24 to 48 hours before racking off the sediments. After racking off the sediments, we inoculate with a yeast that will ferment at cold temperatures and will give us good herbaceous characteristics.

The wine is fermented at 10 to 14°C, the fermentation takes up to 4 weeks to complete. After fermentation the wine is left on the yeast lees for one month before we start to do the batonnage (mixing the yeast lees) which gives the wine more structure.

Tasting Notes

Yellow-green color with tropical fruit flavor, guava and passion fruit. It is a well balanced wine with fine acidity, felt pleasant in the mouth palace. Fresh and balanced, with a fruity character standing out on the aftertaste, which makes this wine an ideal company for dishes or a good appetizer.

Castel Huniade Sauvignon Blanc

0 out of 5

Year: 2017 Variety: Sauvignon Blanc Alcohol content: 12.10% Appellation: DOC Recas Classification: Dry

Viticulture and Vinification

Good Sauvignon Blanc is characterized by zesty green flavors combined with tropical fruit notes. This is highlighted by the way the grapes are harvested for this wine. A part of the vineyard is harvested early for the crisp green style, a further part at mid maturity for a balanced component and then a final section is held until later to develop tropical/passion fruit characters to finish the blend. In the winery the processing is simple. Some parts are given some skin contact before pressing to extract more richness from the grape skins. All parts are fermented cool in stainless steel. Early bottling helps to seal in the freshness.

Tasting notes

Straw yellow with greenish tints, good limpidity. Freshness with vegetable accents, black locust flowers, ripened fruits and melon, on a mineral background. Minerality confirmed by taste, sustained by good acidity, citric tint (lime), passion fruit. The well integrated alcohol sustains the structure of a wine marked by good taste dynamics and tonic notes.

We recommend this wine with:

Green cheese, ewe-cheese, fish salads, caviar salad, Caprese salad, Bulgarian salad, chicken or turkey, pasta with pesto sauce, oven dishes (turkey, partridge), fish and desserts (tarts) with apricots, pears, apple pie.

Castellum Dracula Sauvignon Blanc & Feteasca Alba White Wine 2021

0 out of 5

TECHNICAL INFORMATION:

  • Variety: 70% Sauvignon Blanc & 20% Feteasc Alba & 10% Riesling italian
  • Appelation: DOC-CMD Dealu Mare Ceptura
  • Vintage: 2021
  • Yield: 6000 kg/ha
  • Oak aging: no
  • Alcohol content (vol%): 13,5

ORIGIN

Made from Sauvignon Blanc, Fetească Regală and Italian Riesling grapes. Feteasca Regală (or Royal Maiden in English) is the Royal grape exclusive of Romania. It is a cross between two grape varieties - Fetească Albă (White Maiden) and Grasă de Cotnari that originates from Transylvania. The Royal has the aromatic quality of White Maiden but is a weightier grape with more body. The Royal also has a citrusy edge to its character with lots of orange and lemony fruit. The Royal Maiden works well with oak and can produce bigger wines with a slightly spicy finish.

WINE MAKING PROCESS

The varieties are vinified separately through a careful processing technology from grapes to bottled wine. Direct pressing with pneumatic technology at max. 1 bar followed by deburring - cold storage for 48 hours. The vinification is oriented towards the “zero-zero” principle of use of adjuvants, being a precision vinification that allows use of very low doses of SO2. It is also respected the principle of a “simplified” vinification, in which the interventions on must and wine are kept to a minimum. Alcoholic fermentation in 100 hl stainless steel thermostated at 10-12°C, with yeasts selected for each variety separately. Matured on fine yeasts for 24 weeks in stainless steel pots.

TASTING

Greenish yellow, intense and persistent bouquet, floral with slight mineral hints. It is fresh, fruity, well balanced, ample and persistent aftertaste. One may serve it as an aperitif or with fish, seafood, chicken. Best served at 12-13˚C.

Sole - Sauvignon Blanc

0 out of 5

Year: 2023 Variety: Sauvignon Blanc Alcohol content: 12.5% Appellation: DOC Recas Classification: Dry

Viticulture and Vinification

Sole Sauvignon Blanc is made from grapes at the ripe end of the spectrum. Fruit selection and winemaking are aimed at achieving a fuller style of Sauvignon Blanc with notes of complexity. Oak is not a part of this wine, which relies on grape quality rather than interventionist winemaking. Some on-skins cold maceration of the crushed grapes is carried out because much of the flavour of this grape is located in the skin. The added intensity translates from the juice into the finished wine.

Tasting notes

Pale yellow, slightly metallic, with green tints. Grassy (hay and woodbine), flowery (black locust, sambucus) and slightly citric aromas. Round, lively, balanced, fresh acidity and taste impact.

We recommend this wine with:

Fresh cheeses, Salade nicoise, oven dishes of turkey, chicken, francolin, river fish (trout, pike) and fruit desserts (peaches, apricots)
