Viticulture and Vinification
100% estate grown, handpicked grapes from our Gipsy Hill and Uberland Hill vineyards were gentle destemmed and crushed into stainless steel automated maceration/fermentation tanks and fermented for 2 weeks at 25 ◦C. Gently pressed while still fermenting, the juice is then cooled to -2° C to stop the fermentation with residual sugar and blended also with some dry wine that has been aged on oak staves for 3 months.Tasting notes
Soft and inviting, with a dense core of chocolate cake, cherry and dusky spice flavours that sprawl over a layer of supple tannins. It all melds together on the finish, shooting off sparks of vanilla and raspberry.We recommend this wine with:
Dark Chocolate mousse or Forest fruit flan.Serving temperature: 14°C - 16°C

Viticulture and Vinification
Good Sauvignon Blanc is characterized by zesty green flavors combined with tropical fruit notes. This is highlighted by the way the grapes are harvested for this wine. A part of the vineyard is harvested early for the crisp green style, a further part at mid maturity for a balanced component and then a final section is held until later to develop tropical/passion fruit characters to finish the blend. In the winery the processing is simple. Some parts are given some skin contact before pressing to extract more richness from the grape skins. All parts are fermented cool in stainless steel. Early bottling helps to seal in the freshness.Tasting notes
Straw yellow with greenish tints, good limpidity. Freshness with vegetable accents, black locust flowers, ripened fruits and melon, on a mineral background. Minerality confirmed by taste, sustained by good acidity, citric tint (lime), passion fruit. The well integrated alcohol sustains the structure of a wine marked by good taste dynamics and tonic notes.We recommend this wine with:
Green cheese, ewe-cheese, fish salads, caviar salad, Caprese salad, Bulgarian salad, chicken or turkey, pasta with pesto sauce, oven dishes (turkey, partridge), fish and desserts (tarts) with apricots, pears, apple pie.Serving temperature: 5°C - 8°C

ORIGIN:
Fetească Neagră (or Black Maiden in English) is an old native variety that originates from Moldova and Muntenia and again is capable of producing some great wines of deep colour although the vine needs constant care. The later the grapes are picked the better the results and a constant trimming programme to arrest the vigour produce excellent results. Fetească Neagră is a bramble fruited red with hints of soft cherry. It can vary greatly depending on terroir and oak influence, some can be earthy while others can boast flavours of cappuccino and vanilla.
WINE MAKING PROCESS:
The harvesting is done by hand, and at the same time a quality selection of grapes is being made. The maceration and the alcoholic fermentation take place in temperature controlled stainless steel tanks. It is still here that malolactic fermentation and maturation take place. Once the maturation period is complete, the wine is bottled.
TASTING:
Clear, bright, ruby red color, with violet and purple hues and fresh aromas of sour cherries, forest fruits and spices. Dry, well-balanced texture and acidity, pleasant astringency, rich tannins and intense finish. It is recommended to be served at 16˚C, along with red meat, small game, traditional Romanian red meat-based dishes, fresh cheeses.

ORIGIN:
Fetească Regală (or Royal Maiden in English) is the Royal grape exclusive to Romania. It is a cross between two grape varieties - Fetească Albă and Grasă de Cotnari and originates from Transylvania. Regală has the aromatic quality of Fetească Albă but is a weightier grape with more body. The Regală also has a citrusy edge to its character with lots of orange and lemony fruit. Fetească Regală works well with oak and can produce bigger wines with a slightly spicy finish.
WINE MAKING PROCESS:
The harvested grapes were destemmed and given a soft pressing. The must was chilled to a temperature of 10° C to favour a natural static settling of impurities. After 48 hours the must went into stainless steel fermenting tanks, where it fermented at temperatures held to a maximum of 18° C and was then held in stainless steel tanks at a controlled temperature. The preparation of the wine for bottling in small lots helped conserve freshness and fragrance.
TASTING:
Pale yellow with green tinges, this wine has a delicat bouquet of white flowers, fresh grass and lemon. Taste of ripe green apples, lime and grapefruit, full fo freshness and long aftertaste. It is recommended to be served at 8-10°C. Ideal with white meat dishes, salads or as an aperitif.

The wine is prepared entirely from grapes of Merlot variety coming from the Dealu Mare which is the homeland of red wines in Romania, the seventh largest country producer of grapes in the world.
WINE MAKING PROCESS:
Manual harvesting, de-stemming and very gentile crushing, the must is pumped into temperature controlled stainless steel tanks where it is seeded with yeasts to complete the alcoholic fermentation, followed by controlled malolactic fermentation. maturing period in stainless steel tank for 12 month.
TASTING:
Purple red. Aromas of raspberries, cherries, topped with notes of barrel, coconut and cigar smoke. Balanced taste, complex and explosive, with a long and fragrant aftertaste. It is recommended to accompany pork grilled or lamb. Best served at 13-15˚C.

WINE MAKING PROCESS:
Grapes were harvested on the last week of August at full maturity. The grapes were destemmed without crushing followed by 48 hours cold soaking. Temperature controlled alcoholic fermentation at about 22°C occurred in stainless steel closed tanks with gentle cap management by punching down the skin. Wild malolactic fermentation.
TASTING:
Bright red with an intense note of red berries and dark chocolate. Soft and delicate, medium body with some tannins and vanilla on the palate. It is recommended to be served at 16-18°C, along with poultry, Bolognese pasta, Moroccan and Lebanese food, Brie or Camembert.

WINE MAKING PROCESS:
The grapes were harvested at full maturity. The grapes are destemmed and slightly crushed, followed by 6 – 8 hours of skin contact in the closed press at 8˚C. Alcoholic fermentation was carried out in the presence of selected yeasts at a temperature of 12-14 ° C for 14-21 days.
TASTING:
Pale pink, with a bouquet of red berries and exotic notes of mango. Pleasant aromas of ripe strawberries, sweet cherries with a fresh aftertaste. It is recommended to be served at 10-12˚C. One may serve it with salads, seafood, grilled fish and chicken.

WINE MAKING PROCESS:
The varieties are vinified separately through a careful processing technology from grapes to bottled wine. Direct pressing with pneumatic technology at max. 1 bar followed by deburring - cold storage for 48 hours. The vinification is oriented towards the “zero-zero” principle of use of adjuvants, being a precision vinification that allows use of very low doses of SO2. It is also respected the principle of a “simplified” vinification, in which the interventions on must and wine are kept to a minimum. Alcoholic fermentation in 100 hl stainless steel thermostated at 10-12°C, with yeasts selected for each variety separately. Matured on fine yeasts for 24 weeks in stainless steel pots.
TASTING:
Greenish yellow, intense and persistent bouquet, floral with slight mineral hints. It is fresh, fruity, well balanced, ample and persistent aftertaste. One may serve it as an aperitif or with fish, seafood, chicken. Best served at 12-13˚C.

ORIGIN: Tămâioasă Românească, described by Jancis Robinson as the ‘frankincense grape’ due to its aroma, is one of the ancient varieties of Romania. Romanians love the versatility of the grape, it can be fermented dry which produces amazing results or up to and over 150g/l of residual sugar.
A version of Muscat Blanc a petits grains, the variety naturally sweet does exceptionally well in the Dealu Mare region with its stony soils. One to watch!
WINE MAKING PROCESS:
The grapes are destemmed and slightly crushed, followed by 6 – 8 hours of skin contact in the closed press at 8˚C. Alcoholic fermentation occurs in stainless steel during a period of 14 days at controlled temperature of about 13-14°C.
TASTING: Pale yellow, with delicious notes of exotic fruits (pineapple, pomelo). Dry, the flavors of ripe papaya are intense, well supported by robust structure and balanced acidity giving the wine amplitude and length. It is recommended to be served at 10-12˚C. One may serve it as an aperitif or with salads, seafood, grilled white fish.
