Vinification Particularities In order to preserve the intensity of flavours, the component wines from this cuvee were fermented at 10°C and to perfect the taste Chardonnay was kept in American oak barrels for six months.
Tasting Notes
Lively green colour, a mixture of summer flowers and honey flavours. Good structure in taste, fresh and a lovely acidity in good relation with the smooth oaky taste. Fresh summer fruits evolve on the finish. Food pairing Very good associated with fish and poultry dishes. Serving temperature: 10-12 ° C

Vinification This Feteasca Neagra is made from vines which are over 30 years old. The grapes are only picked when they have reached their full maturity.The grapes are fermented for 8 to 12 day at a maximum temperature of 29°C to extract its intense colour. 40% of the wine is placed in oak barrels for up to 6 months after which it is blended.
Tasting notes Dark purple in colour with a mixture of spice and black forest fruits. Complex flavours of fruit and spice with soft tannins give this wine its lovely velvety finish.
Food pairing Barbecued meat and rich pasta sauces. Serving temperature:18-20ËšC

Vinification particularities A blend between Chardonnay, Sauvignon Blanc and Pinot Gris, this wine was given a lot of attention in order to achieve the perfect balance The name is derived from blending its flavors, similar to smoke from the barrel wood oak the wine was aged. Fume has become one of the most popular wines of Budureasca not only because of international competitions won, but its originality.
Tasting notes
Straw yellow color, complex nose with peaches and apricots flavors, with a touch of vanilla and smoked wood. The whole set is well balanced with good intensity in taste and long aftertaste. Food pairing Chicken, fish, seafood and pasta dishes. Serving temperature:12-14ËšC

Vinification In order to reach the maximum potential of aromas, the skin contact is longer for this wine. Afterwards the grapes are pressed slowly, carefully, so to preserve all aromas and flavours. The wine is fermented at low temperatures of 10 to 13°C to maintain intense fruit aromas and a nice freshness.
Tasting Notes Pale straw in colour with strong herbaceous aromas and just a hint of fennel. Good balance between acidity and body give this wine its long aftertaste. Food Pairing Chicken, seafood, fish and pasta dishes. Serving temperature: 10-12ËšC

Vinification Shiraz is a variety originar from France that has been exploited and promoted into the New World of the wine. Shiraz is well suited to the soils and climate of the Dealu Mare. The grapes are picked when they have reached their maximum maturity resulting a production of maximum 7 tones/hectar. Before fermentation the grapes are given 3 days cold soak on the skins at 10°C which gives this wine its fruity and spicy characteristics. Fermentation is carried out for 20 days at a maximum temperature of 28°C.
Tasting Notes This Shiraz has a beautiful dark purple colour with blackberry and black currant aromas and notes of spice. A mixture of fruit and black pepper on the palate, soft and well balanced wine with a long fruity aftertaste. 30% of this wine is aged in American oak barrels for six months before it is blended back with the rest of the wine.
Food Pairing Recommended with spicy dishes, stakes, sausages, grills and seasoned cheese. Serving temperature: 18-20ËšC

Budureasca The Vine in Flames Pinot Noir 2021

Vinification Pinot Noir is well suited to the soils and climate of the Dealu Mare region and it is usually one of the first grapes to be picked however in 2013 the grapes took longer to ripen. All the grapes were picked by hand and placed into 3 tones stainless steel trailers. The grapes were then de-stemmed but not crushed in order to achieve the fruity characteristics of this grape variety. We gave the grapes 3 days cold soak at 10°C after which the wine went through a regular fermentation from 8 to 10 days at a temperature between 25 to 28°C. Only 2% of the wine was matured in oak barrels for six months before it was blended together to make this wine. This was to give the wine a little more structure.
Tasting notes Ruby in colour with complex aromas of raspberry and cherry, with a hint of spice and black cherry. Medium to light bodied wine with lovely soft tannins, giving this wine it’s lovely long finish.
Food pairing Pork, lamb, duck and wild game. Serving temperature: 18-20°C

Vinification Particularities The grapes are picked up at their optimum level of maturity. Specially selected yeast is used to extract maximum aromas and flavours. The grapes are fermented for 15 to 25 days on the skins. The wine is matured in oak barrels to gain complexity and structure and it is aged in bottles for at least 4 months.
Tasting notes Dark Ruby in colour, a mixture of green pepper and spice on the nose, a mixture of blackberry and blackcurrant flavours with a good structure coming from natural tannins and oak tannins.
Food pairing Good with lamb, pork and beef. Serving temperature: 18-19°C
