Vinification particularities Busuioaca de Bohotin is a very picky grape variety that is grown and vinified with difficulty. In Budureasca vineyards it was planted on an area that offers an important number of hours in the sun to be protected from diseases that occur due to moisture . An elegant and well balanced wine, obtained from grapes cultivated on 6 ha of old vineyard. After being pressed, the grapes had a low-temperature fermentation for 3-4 weeks, to keep natural sugars, which provides harmony between the variety flavors and sweetness. Tasting Notes Pale pink color and aromas of raspberries and wild strawberries with fine notes of roses. The taste is fresh, balanced, with rose petal flavor and a fruity finish. Food pairing It may be associated with desserts based on fruits, cheese or chocolate. Serving temperature: 10-12ËšC.

Vinification This Feteasca Neagra is made from vines which are over 30 years old. The grapes are only picked when they have reached their full maturity.The grapes are fermented for 8 to 12 day at a maximum temperature of 29°C to extract its intense colour. 40% of the wine is placed in oak barrels for up to 6 months after which it is blended.

Tasting notes Dark purple in colour with a mixture of spice and black forest fruits. Complex flavours of fruit and spice with soft tannins give this wine its lovely velvety finish.

Food pairing Barbecued meat and rich pasta sauces. Serving temperature:18-20ËšC

Vinification In order to reach the maximum potential of aromas, the skin contact is longer for this wine. Afterwards the grapes are pressed slowly, carefully, so to preserve all aromas and flavours. Vinification Shiraz is a variety originar from France that has been exploited and promoted into the New World of the wine. Shiraz is well suited to the soils and climate of the Dealu Mare. The grapes are picked when they have reached their maximum maturity resulting a production of maximum 7 tones/hectar. Before fermentation the grapes are given 3 days cold soak on the skins at 10°C which gives this wine its fruity and spicy characteristics. Fermentation is carried out for 20 days at a maximum temperature of 28°C.

Tasting Notes This Shiraz has a beautiful dark purple colour with blackberry and black currant aromas and notes of spice. A mixture of fruit and black pepper on the palate, soft and well balanced wine with a long fruity aftertaste. 30% of this wine is aged in American oak barrels for six months before it is blended back with the rest of the wine.

Food Pairing Recommended with spicy dishes, stakes, sausages, grills and seasoned cheese. Serving temperature: 18-20ËšC

Budureasca The Vine in Flames Pinot Noir 2021

Vinification Pinot Noir is well suited to the soils and climate of the Dealu Mare region and it is usually one of the first grapes to be picked however in 2013 the grapes took longer to ripen. All the grapes were picked by hand and placed into 3 tones stainless steel trailers. The grapes were then de-stemmed but not crushed in order to achieve the fruity characteristics of this grape variety. We gave the grapes 3 days cold soak at 10°C after which the wine went through a regular fermentation from 8 to 10 days at a temperature between 25 to 28°C. Only 2% of the wine was matured in oak barrels for six months before it was blended together to make this wine. This was to give the wine a little more structure.

Tasting notes Ruby in colour with complex aromas of raspberry and cherry, with a hint of spice and black cherry. Medium to light bodied wine with lovely soft tannins, giving this wine it’s lovely long finish.

Food pairing Pork, lamb, duck and wild game. Serving temperature: 18-20°C

Tasting notes Dark Ruby in colour, a mixture of green pepper and spice on the nose, a mixture of blackberry and blackcurrant flavours with a good structure coming from natural tannins and oak tannins.

Food pairing Good with lamb, pork and beef. Serving temperature: 18-19°C

Vinification Merlot is well suited to the soils and climate of the Dealu Mare region and was one of the most widely planted varieties in our region. The Merlot ripens usually in the middle part of October depending on the year. 2013 was an exceptional year for Merlot. To achieve its fruity characteristic we ferment this wine at around 25°C for up to 20 days. After malolactic fermentation is complete we place 70% of the wine in three-year-old American and Romanian oak barrels up to 5 months after which it is blended with the rest of the wine. Tasting notes Dark red in colour, ripe plum just a hint of spice on the nose. Complex flavours of fruit with soft tannins giving this wine its lovely velvety finish. Food Pairing Barbecued meat and rich pasta sauces Serving temperature: 18-20ºC.
