ORIGIN:

This Fetească Neagră is astonishing with its elegant, unique character that manages to delight even the most demanding palates with its aromas, delighting the palate every time, but especially when served at a temperature of 14 degrees Celsius, after a previous decanting of 20-30 minutes.
MAKING PROGRESS:
Grapes were harvested by hand from a carefully selected plot, characterized by a sandy substrate, with infusions of stone and calcareous rock, and southeastern exposure. Harvesting was carried out at a sugar content of 230g/l, in the second decade of October. The grapes were destemmed without crushing and placed in macerators, where the maceration and fermentation process was closely monitored for 12 days. Alcoholic and malolactic fermentation was carried out in stainless steel vessels and maturation took place in Romanian oak barrels for 24 months.
TASTING:
Discrete vanilla aromas complemented by chocolate notes. The taste is dominated by prunes on the palate. Elegant finish with slightly spicy notes. Serving: Slightly chilled (14°C), decanted (20'-30') accompanied by a tasty dinner and friends.

ORIGIN:

The most widespread Romanian grape variety finds in this wine its typical expression for the terroir of Averești. No detail has been left to chance, and from the vineyard to the bottle, the aim has been to create a memorable wine that honors the variety and the area where it comes from.
MAKING PROGRESS: Grapes were harvested by hand at a sugar content of 240g/l when the seeds became ripe. The berries were removed from the grapes without crushing and placed in maceration tanks. Maceration took place at a temperature of 21-22°C for 15 days with slight cooling, initially at a temperature of 14°C. Towards the end of the maceration-fermentation, when the wine is transferred to the fermentation tanks, malolactic fermentation is initiated at a temperature of 18°C. TASTING: Complex aromas of plum, even jam, and cherry compote in the foreground, but also with fine hints of smoke in the background. Taste with rustic notes, like any red grape grown in cooler areas, dominated by red berry and black cherry fruit. Slight whiff of white pepper - characteristic of red wines made in high-altitude areas. Serve slightly chilled (12-14⁰C), good pairing with spicy meats, braises, zahana dishes, pork ribs. Vinification Noble 5 is made of selected grapes from our best plots. Vinification took place separately for each variety. For efficient extraction, the must had a classical fermentation-maceration for over 20 days. Then the wines were matured in French and Romanian oak barrels for 9 to 12 months, depending on the evolution of each until the perfect balance between structure and flavors. After this period, only the best barrels were selected to create Noble 5. It took 3 months for making the blend, during which the winemaker searched the harmony of the 5 varieties.

Fetească Neagră (or Black Maiden in English) is an old native variety that originates from Moldova and Muntenia and again is capable of producing some great wines of deep colour although the vine needs constant care. The later the grapes are picked the better the results and a constant trimming programme to arrest the vigour produce excellent results. Fetească Neagră is a bramble fruited red with hints of soft cherry. It can vary greatly depending on terroir and oak influence, some can be earthy while others can boast flavours of cappuccino and vanilla.

WINE MAKING PROCESS

The harvesting is done by hand, and at the same time a quality selection of grapes is being made. The maceration and the alcoholic fermentation take place in temperature controlled  stainless steel tanks. It is still here that malolactic fermentation and maturation take place. Once the maturation period is complete, the wine is bottled.

TASTING

Clear, bright, ruby red color, with violet and purple hues and fresh aromas of sour cherries, forest fruits and spices. Dry, well-balanced texture and acidity, pleasant astringency, rich tannins and intense finish. It is recommended to be served at 16˚C, along with red meat, small game, traditional Romanian red meat-based dishes, fresh cheeses.

Grapes harvested during the first half of September, alcoholic fermentation occurs in vertical static stainless steel tank with automatic cap management. Skin maceration for 7 days at 27°-28°C. Pumping over few minutes every 3-4 h. Malolactic fermentation in stainless steel. 10% of the blend had been aged in Romanian oak barriques. TASTING:

Intense ruby, with dominant aromas of black and red fruits (blackberries, cranberries). Full body wine, elegant with spice notes and vanilla aftertaste. It is recommended to be served at 14-16°C. It will be well suited with barbecue, pasta or cheese.
