It is a long time since Aligoté wines from Sarica Niculițel Vineyard have come into prominence and are now internationally known.

MAKING PROGRESS:
Grapes harvesting was done by hand, from carefully selected plots, in the early hours of the morning to benefit from a low temperature. To obtain Busuioacea vinified in white, the whole vinification process was carried out at low temperatures. The freshly picked grapes were covered with dry ice to lower their temperature and then left for 12 hours in the cold (0 -1⁰C). The grapes were pressed whole for a very short time.
TASTING:
The special character of this wine is unique, incomparable. Its exotic fruit flavors (passion fruit, papaya, melon) are wrapped in green basil. This Fetească Neagră is astonishing with its elegant, unique character that manages to delight even the most demanding palates with its aromas, delighting the palate every time, but especially when served at a temperature of 14 degrees Celsius, after a previous decanting of 20-30 minutes.
MAKING PROGRESS:
Grapes were harvested by hand from a carefully selected plot, characterized by a sandy substrate, with infusions of stone and calcareous rock, and southeastern exposure. Harvesting was carried out at a sugar content of 230g/l, in the second decade of October. The grapes were destemmed without crushing and placed in macerators, where the maceration and fermentation process was closely monitored for 12 days. Alcoholic and malolactic fermentation was carried out in stainless steel vessels and maturation took place in Romanian oak barrels for 24 months.
TASTING:
Discrete vanilla aromas complemented by chocolate notes. The taste is dominated by prunes on the palate. Elegant finish with slightly spicy notes. Serving: Slightly chilled (14°C), decanted (20'-30') accompanied by a tasty dinner and friends.

MAKING PROGRESS: Grapes were harvested by hand with great care, at a sugar content of at least 195g/l., then destemmed without crushing. The grapes were cooled to a temperature of 10°C and then macerated in the press for 6-8 hours. Maceration of the Busuioaca de Bohotin variety was done in rotating tanks for 24 hours at a temperature of 8°C. Maceration - the fermentation of the Black Fetească grapes was carried out in macerators at a temperature of 21°C for 10 days, with a slight drop in temperature at the beginning, and then a slight increase in temperature towards the end. TASTING: Fresh wine with explosive aromas of berry and whipped cream notes, complemented by red fruits and fine earthy and truffle nuances. ORIGIN:

The most widespread Romanian grape variety finds in this wine its typical expression for the terroir of Averești. No detail has been left to chance, and from the vineyard to the bottle, the aim has been to create a memorable wine that honors the variety and the area where it comes from.
MAKING PROGRESS: Grapes were harvested by hand at a sugar content of 240g/l when the seeds became ripe. The berries were removed from the grapes without crushing and placed in maceration tanks. Maceration took place at a temperature of 21-22°C for 15 days with slight cooling, initially at a temperature of 14°C. Towards the end of the maceration-fermentation, when the wine is transferred to the fermentation tanks, malolactic fermentation is initiated at a temperature of 18°C. TASTING: Complex aromas of plum, even jam, and cherry compote in the foreground, but also with fine hints of smoke in the background. Taste with rustic notes, like any red grape grown in cooler areas, dominated by red berry and black cherry fruit. Slight whiff of white pepper - characteristic of red wines made in high-altitude areas. Serve slightly chilled (12-14⁰C), good pairing with spicy meats, braises, zahana dishes, pork ribs. Rosé wines have become very popular in recent years due to their taste and adaptability, regardless of season and culinary pairing. This Merlot rosé, even if tasted on a hot summer day, in the evening at dinner, or at night in the club, in winter in front of the fireplace, is always an appropriate choice.
MAKING PROGRESS: Grapes were harvested by hand with great care, at a sugar content of at least 195g/l., then destemmed without crushing. The grapes were cooled to a temperature of 10°C and then macerated in the press for 6-8 hours. The must is obtained in a controlled atmosphere using a short, low-pressure pressing cycle. Decanting of the must was done gravitationally, cold. The must was fermented in temperature-controlled stainless steel tanks. TASTING: Nativus Rose de Averești combines the delicate body of a rose with the strong flavors of Merlot. Floral notes intertwine with berry nuances and create this expressive rose with a memorable personality. Serve well chilled (8-10⁰C), good to pair with poultry with vegetable garnish, seafood with aromatic greens, fruit dessert.

The philosophy of Zghihara wine is a special variety, a wild noble whose strong personality and stingy nature, settled in the land of Huși thousands of years ago, has perfected a wine that stands out from the classical patterns. MAKING PROGRESS: Grapes were harvested by hand with great care, at a sugar content of minimum 195g/l., then destemmed without crushing. The grapes were cooled to a temperature of 10°C and then macerated in the press for 6-8 hours. The must is obtained in a controlled atmosphere using a short, low-pressure pressing cycle. Decanting of the must was done gravitationally, cold. The must was fermented in stainless steel tanks at a controlled temperature, and the young wine obtained was kept on fine lees storage until March to gain structure and volume. TASTING: Pleasant but discreet aromas of green apples, lime, and gooseberries. Lively, fresh, and fruity, with light hints of marjoram and a mineral aftertaste, this is your everyday wine. Serve well chilled (8-10⁰C), good paired with white meat poultry, preferably partridge or fish, seafood.

Viticulture and Vinification

100% estate grown grapes from our vineyards. Gently destemmed and crushed, the grapes were cold macerated for 2 days at 5°C before being inoculated with selected yeast for the alcoholic fermentation which took 3 weeks at 27°C . Gently pressed, centrifuged and then put through a full malolactic fermentation, the wine was then matured for 3 months with French oak staves.

Tasting notes

Vibrant, floral aroma of spiced plums, vanilla toffees and peppery aromas with a silky, dry-yet-fruity medium body and a long, tangy raspberry finish with elegant tannins.

Vinification particularities Busuioaca de Bohotin is a very picky grape variety that is grown and vinified with difficulty. In Budureasca vineyards it was planted on an area that offers an important number of hours in the sun to be protected from diseases that occur due to moisture . An elegant and well balanced wine, obtained from grapes cultivated on 6 ha of old vineyard. After being pressed, the grapes had a low-temperature fermentation for 3-4 weeks, to keep natural sugars, which provides harmony between the variety flavors and sweetness. Tasting Notes Pale pink color and aromas of raspberries and wild strawberries with fine notes of roses. The taste is fresh, balanced, with rose petal flavor and a fruity finish. Food pairing It may be associated with desserts based on fruits, cheese or chocolate. Serving temperature: 10-12˚C.

Vinification Noble 5 is made of selected grapes from our best plots. Vinification took place separately for each variety. For efficient extraction, the must had a classical fermentation-maceration for over 20 days. Then the wines were matured in French and Romanian oak barrels for 9 to 12 months, depending on the evolution of each until the perfect balance between structure and flavors. After this period, only the best barrels were selected to create Noble 5. It took 3 months for making the blend, during which the winemaker searched the harmony of the 5 varieties.

Vinification

The grapes were allowed to reach their full maturity before picking. The grapes were crushed and placed in the press. Only the free run juice was used to make this wine. Each grape variety was fermented separately using a wild yeast strain for the first 48 hours of fermentation to give the wine more intensity of flavours and aromas. The Chardonnay was fermented in American oak barrels for seven months before it was blended with the Tamaioasa Romaneasca.

Tasting notes

Pale straw in colour, intense floral aroma with a hint of spice. Full-bodied white wine with complex flavours of floral and fruit with just a hint of oak on the finish giving this wine a lovely round and long finish.

Chicken, seafood, cheese and pasta dishes. Serving temperature: 10 - 12˚C

Vinification

A well balanced wine with taste of plums with soft and delicate tannins giving its velvety aftertaste. Food Pairing May be associated with spicy dishes: stakes, grills and matured cheese. Serving Temperature: 18-20˚C.

Vinification The vineyards where this Sauvignon Blanc comes from is situated on the very top of the hills at 400 m above sea level on a north facing vineyard. Here it is slightly cooler than any other part of our vineyards and with soils of sand and limestone which gives this wine some mineralogy. The Sauvignon Blanc grapes are handled very carefully during picking and sorting. Every care is taken to limit the exposure to oxygen during the pressing of the grapes. Only the free run is used to make this wine. Grape must is cooled and allowed to settle for 24 to 48 hours before racking off the sediments. After racking off the sediments, we inoculate with a yeast that will ferment at cold temperatures and will give us good herbaceous characteristics.

The wine is fermented at 10 to 14°C, the fermentation takes up to 4 weeks to complete. After fermentation the wine is left on the yeast lees for one month before we start to do the batonnage (mixing the yeast lees) which gives the wine more structure.

Tasting Notes

Yellow-green color with tropical fruit flavor, guava and passion fruit. It is a well balanced wine with fine acidity, felt pleasant in the mouth palace. Fresh and balanced, with a fruity character standing out on the aftertaste, which makes this wine an ideal company for dishes or a good appetizer.

Chicken, seafood, cheese and pasta dishes. Serving temperature 10 -12ºC.
