The Negru de Dragasani grape variety was obtained at the Dragasani viticulture research station through individual selection. It is a hybrid, officially recognized in 1993, between the Negru Vartos and Saperavi varieties (a native grapevine from Georgia, commonly used in blends to produce high-quality red wines). The grape has a black-blueish color, with red-colored, juicy, non-aromatic pulp and a straightforward taste. Kaspers Elderflower Slow Gin

By contrast, our innovative approach starts with the hand-picked elderflower which is fermented and double distilled. Viticulture and Vinification

Feteascã Neagrã grapes for this wine come from special green harvested- yield-reduced vines. Early in the season, workers go through the vineyards and individually cut a percentage of the grapes from the vine and throw them on the vineyard floor. This process is more painful for the viticulturist than the grape vine, which benefits by being able to put more of its resources into the remaining grapes, to give riper and develop more flavour. In the winery the grapes are treated to the same fermentation on-skins process, with controlled temperatures around 28°C and regulated pump overs while on skins to ensure good mixing/fruit extraction.

Tasting notes

Violet red (typical for this variety), good limpidity. Strong aromas of fruits (sour cherries, currants, plums), flowers and slightly vegetal aromas. It initially resembles wet tree roots after rain and the young plants in the forest, followed by notes of fruits and flowers, with vague tints of vanilla. Attack above average, very good acidity, a lively taste, with active, persistent tannins and integrated alcohol. Good body and taste dynamics, slightly vegetal ending interesting aftertaste for a young wine.

We recommend this wine with:

Traditional Romanian dishes, aubergine salad, small and medium game cooked in the oven, pasta with prosciutto, pizza, pork, beef and duck dishes, desserts with cherries, blackberries, currants.

ORIGIN: Fetească Regală (or Royal Maiden in English) is the Royal grape exclusive to Romania. It is a cross between two grape varieties - Fetească Albă and Grasă de Cotnari and again originates from Transylvania. Regală has the aromatic quality of Fetească Albă but is a weightier grape with more body.

The Regală also has a citrusy edge to its character with lots of orange and lemony fruit. Fetească Regală works well with oak and can produce bigger wines with a slightly spicy finish.

WINE MAKING PROCESS: The harvested grapes were destemmed and given a soft pressing. The must was chilled to a temperature of 10° C to favour a natural static settling of impurities. After 48 hours the must went into stainless steel fermenting tanks, where it fermented at temperatures held to a maximum of 18° C and was then held in stainless steel tanks at a controlled temperature. The preparation of the wine for bottling in small lots helped conserve freshness and fragrance.

TASTING: Pale yellow with green tinges, this wine has a bouquet of fresh fruits, green apple in particular. Well balanced, fresh and semi-aromatic dry wine. It is recommended to be served at 8°C. Ideal with white meat dishes, fresh seafood or as an aperitif.

WINE MAKING PROCESS:

Grapes were harvested on the middle of September by hand. Alcoholic fermentation in closed tanks with gentle cap irrigator, extended skin contact for 21 days. Malolactic fermentation and maturation for in Romanian oak barrels.

TASTING:

Rich in black fruits – cherries, currants and berries, intense and elegant, completed by vanilla notes; excellent length and structure. It is recommended to be served at 16-18°C, alongside with braised short ribs, mushroom stroganoff, Moroccan lamb dishes, gnocchi with beef ragu.

ORIGIN:

The wine is prepared entirely from grapes of Merlot, Syrah and Feteasca Neagra, varieties coming from the company’s own vineyards located in Sahateni (Dealu Mare, region) - Romania, the seventh largest country producer of grapes in the world.

WINE MAKING PROCESS:

Following hand harvesting at full ripeness, during the second week of September (average sugar 25,7 °Brix) , the grapes were destined and slightly crushed.  Fermentation where conducted in stainless steel closed tank with gentle cap irrigator, at 26-29˚C for 14 days.

TASTING:

Ripe red & dark fruits taste, completed by some sweet vanilla and spicy hints; mild tannins are well integrated into the firm but elegant structure; silky on the palate, followed by long lasting finish. It is recommended to be served at 16-18°C, alongside with spicy foods, roast duck and turkey, spicy Italian sausages, smoked ham and chorizo, meatloaves.

Viticulture and Vinification

The grapes are picked at dawn in order to get a maximum freshness of the wine. The red grapes used for this wine are left in their skins for a short period, in order to extract just a hint of colour, before the light pink juice is collected for fermentation. Fermentation takes place at cool temperatures, in order to retain the fresh aromas during the entire process. The vinification is as minimal as possible and aims to transform the grapes into wine in the purest way. In order to achieve this, we do not use oak wood or secondary fermentations, the wine remaining in neutral stainless steel tanks and from there it goes directly into bottles, without aging it too much in the winery, so that the character and freshness of the grapes reaches the glass..

Tasting notes

Rose pink colour, medium intensity, with good limpidity. Opens gently with aromas of red fruits (sweet cherries, pomegranates), rose petals, with vegetal aspects. A refreshing and lively wine, with a good acidity sustaining a structure based on freshness and elegance, with an ending reminding of cranberries

We recommend this wine with:

Sushi, Asian dishes, fish salads, roast beef, veal, turkey, duck, desserts with berries.
