Viticulture and Vinification
Central to this wine is the “cane-cut” process. Better parcels of Cabernet and Merlot grapes are left to hang on the vine until fully ripe. Then to further concentrate the flavour, they are partially dried/stressed by cutting the cane on which the bunches are born to separate the grapes from the roots of the vine. Over a period ranging from a week to 20 days (depending on the weather) the grapes begin to soften and finally to appear a little saggy. This is due to evaporative water loss which concentrates the flavour and sugars. At the same time, by some unknown process, additional flavours are formed in the grape as a slight violet-like, floral aroma. These translate into the wine and can be tasted quite strongly in the wine when young and becoming more integrated with time in bottle.Tasting notes
Ruby red. Aromas of overly ripened fruits are revealed after aeration (sour cherries, cherries, currants and plums), on a background of raisins and Caribbean rum, vanilla san slightly caramel, with an ending of pepper. The acidity is high, fixes the aromas well and gives life to the wine with a good aging potential.We recommend this wine with:
Pfeffersteak, fillet mignon, large and medium game, boar cooked over the embers, veal, duck, pork dishes, lamb, Mangalitsa pork, beef tartare, mouldy cheeses, desserts with cherries, blackberries, currants, chocolate mousse.Serving temperature: 14°C - 16°C

ORIGIN:
The wine is prepared entirely from grapes of Merlot variety coming from the vineyards located in Dealu Mare region - Romania, the seventh largest country producer of grapes in the world.
WINE MAKING PROCESS:
The grapes are hand picked at full ripeness, the fermentation takes place in stainless steel tanks with re-circulation, at controlled temperature of 25° to 27° , for 15 days to preserve the fruity characteristics of the wine. 40% of this wine is placed in Romanian and American oak barrels for 3-4 months.
TASTING:
Dark ruby in color with aromas of black fruits and strong taste of coconut and vanilla. Strong flavors and elegant tannins, round and full bodied yet easy drinking wine. Smooth and persistent aftertaste. It is recommended to be served at the temperature of 18-20°C accompanied by dishes based on pork meat, lamb, beef and grilled mushrooms.

ORIGIN:
Babeasca Neagra is predominantly cultivated in the vineyards of Moldova. With a red-ruby color, Băbeasca Neagră wines are light red wines, with moderate alcohol content and high acidity for a red wine, giving them a lively and fresh character. They present aromas of red fruits (bitter cherries, dried plums) as well as floral tones (violets, peonies, iris). The wine is easy-going, with a subtle, refreshing undertone in the aftertaste. ORIGIN:
Șarba is a Romanian grape variety obtained through the crossbreeding of two grape varieties: Tămâioasă Românească and Italian Riesling. Both aromatically and on the palate, it reveals intense notes of rose, basil, linden flowers, and honey, all delicately and persistently present in both taste and aftertaste. ORIGIN:
Cadarca is a traditional grape variety originating from the vineyards of Miniș-Măderat. The wine is produced with the addition of raisins and exhibits a color ranging from bright red to deep red. It possesses a distinctive aroma of fresh fruit, being robust, full, velvety, and at times, slightly acidic. It develops a complex bouquet after 2-3 years. Under raisining conditions, oxidative wines with clove aromas and a slightly astringent taste can be obtained. ORIGIN:
The Negru de Dragasani grape variety was obtained at the Dragasani viticulture research station through individual selection. It is a hybrid, officially recognized in 1993, between the Negru Vartos and Saperavi varieties (a native grapevine from Georgia, commonly used in blends to produce high-quality red wines). The grape has a black-blueish color, with red-colored, juicy, non-aromatic pulp and a straightforward taste. Wines produced from this variety are dry, more robust, strikingly red, with flavors and aromas of black cherries, sour cherries, blueberries, blackberries, and spices. They are suitable for aging in oak barrels and subsequently in bottles. TASTING: With its mesmerizing ruby red color, this wine reveals dominant aromas of red fruits in its bouquet. The taste is a delightful harmony, featuring well-balanced notes of ripe tannins, along with delicate hints of vanilla, chocolate, and pepper. Best enjoyed at 14-16°C, it promises a sophisticated and captivating wine experience, embodying a symphony of flavors for the discerning palate.Kaspers Elderflower Slow Gin
- Gin is typically made from a grain-based spirit to which botanicals are added. By contrast, our innovative approach starts with the hand-picked elderflower which is fermented and double distilled. Ten botanicals are then added, seven of which are commonly used in gin and three are from the local biodiversity rich wildflower meadows of Transylvania.
- We then distil a third time to produce our unique drink that retains the refreshing floral notes of elderflower but now combined with the distinctive taste of gin from the juniper berries. Our small batch distilling uses the traditional equipment and skills passed down through generations, but we have added some modern science to guarantee quality and consistency.
- We established our social enterprise in Saschiz, a UNESCO World Heritage Site in 2010 with the objectives of buying our raw materials (flowers, fruit and vegetables) from the community and we employ local people to produce our jams, chutney and cordials. This is to ensure a sustainable approach that puts people and the environment at the heart of what we do. Our production is based on traditional skills and the innovative use of local ingredients.
