The philosophy of AVEREȘTI wine is the key word that designates not just any Busuioaca, but only the original one, which has enjoyed the recognition of specialists and amateurs for decades (some say even centuries). The Busuioaca grapes here have found the best soil and climate conditions to express themselves tastefully and aromatically in a unique way - often imitated but never equalled. Here, at Averești, through the careful cultivation of several biotypes of Busuioaca, seductive wines are born with freshness, intensity of taste, and quality of aromas that set the benchmark for this variety.
Grapes were harvested in the morning until 10 o'clock, by hand with great care, at a sugar content of 195g/l., then destemmed without crushing. The grapes were cooled to a temperature of 10°C and then macerated in the press for 6 hours. After gravity settling for 24 hours, the must was fermented in 2000L vessels at 12°C for 18 days.
Fresh aromas of rose and basil. Appetizing taste of ripe citrus and rose sweetness. Long, memorable finish. Serve very well chilled (8°C) accompanied by music, dancing, and lots of friends. The high concentration of sugar amplifies the flavors, making this wine an excellent dessert or accompaniment, but also a companion for dishes with sweet and sour sauce.

This Fetească Neagră is astonishing with its elegant, unique character that manages to delight even the most demanding palates with its aromas, delighting the palate every time, but especially when served at a temperature of 14 degrees Celsius, after a previous decanting of 20-30 minutes.
Grapes were harvested by hand from a carefully selected plot, characterized by a sandy substrate, with infusions of stone and calcareous rock, and southeastern exposure. Harvesting was carried out at a sugar content of 230g/l, in the second decade of October. The grapes were destemmed without crushing and placed in macerators, where the maceration and fermentation process was closely monitored for 12 days. Alcoholic and malolactic fermentation was carried out in stainless steel vessels and maturation took place in Romanian oak barrels for 24 months.
Discrete vanilla aromas complemented by chocolate notes. The taste is dominated by prunes on the palate. Elegant finish with slightly spicy notes. Serving: Slightly chilled (14°C), decanted (20'-30') accompanied by a tasty dinner and friends.

The grapes were cooled to a temperature of 10°C and then macerated in the press for 6 hours. The grapes were harvested by hand. The grapes were macerated at low temperatures, and the pressing was done cold. Fermentation of the must took place in stainless steel vessels at controlled temperatures.
TASTING:
Zghihară wine is a zghihăt (Playful) wine, where the high acidity blends very well with the full and refreshing taste in which we find fruity notes of green apple, gooseberries, but also vegetal traces of green bell pepper and fennel. The aftertaste is short to medium, mineral, with a citric and slightly bitter finish with traces of apricot kernels. Serve well chilled (8-10°C), it can be enjoyed at any time of the day, both as an aperitif and as an accompaniment to fish dishes, seafood, white meat, as well as dishes with soft-ripened cheeses.

MAKING PROGRESS: Grapes were harvested by hand with great care, at a sugar content of at least 195g/l., then destemmed without crushing. The grapes were cooled to a temperature of 10°C and then macerated in the press for 6-8 hours. Maceration for 6 hours in presses, cold, at a temperature of 8-10°C, under inert gas protection. The resulting must is gravity-cleared at 12°C for 32 hours. Fermentation takes place in stainless steel tanks for 20 days at a temperature of 12-14°C. TASTING: Aromas of well-ripened basil and soft hints of rose. The palate has a balance of rose and grapefruit notes that outline the wine's fresh feel. Long, pleasant finish with sweet red fruit sensations. Serve chilled at 10-12⁰C with duck breast, chicken or duck liver, vanilla cream with fruit.

A philosophy of the Fetească Neagră & Busuioaca de Bohotin wine is a UNIQUE pairing that you will not find from any other producer, where the pairing of the two varieties creates an aromatic red wine with a full, joyful taste with rustic notes. MAKING PROGRESS: Grapes were harvested by hand with great care, at a sugar content of at least 195g/l., then destemmed without crushing. The grapes were cooled to a temperature of 10°C and then macerated in the press for 6-8 hours. Maceration of the Busuioaca de Bohotin variety was done in rotating tanks for 24 hours at a temperature of 8°C. Maceration - the fermentation of the Black Fetească grapes was carried out in macerators at a temperature of 21°C for 10 days, with a slight drop in temperature at the beginning, and then a slight increase in temperature towards the end. TASTING: Fresh wine with explosive aromas of berry and whipped cream notes, complemented by red fruits and fine earthy and truffle nuances. Full, cheerful palate with rustic notes ranging from fresh fruit to jammy tones. Fruity finish, well punctuated by pleasant acidity. Serve lightly chilled at 12-14⁰C, alongside beef or pork.

MAKING PROGRESS:
Grapes were harvested by hand at a sugar content of 240g/l when the seeds became ripe. The berries were removed from the grapes without crushing and placed in maceration tanks. Maceration took place at a temperature of 21-22°C for 15 days with slight cooling, initially at a temperature of 14°C. Towards the end of the maceration-fermentation, when the wine is transferred to the fermentation tanks, malolactic fermentation is initiated at a temperature of 18°C.
TASTING:
Complex aromas of plum, even jam, and cherry compote in the foreground, but also with fine hints of smoke in the background. Taste with rustic notes, like any red grape grown in cooler areas, dominated by red berry and black cherry fruit. Slight whiff of white pepper - characteristic of red wines made in high-altitude areas. Serve slightly chilled (12-14⁰C), good pairing with spicy meats, braises, zahana dishes, pork ribs. 100% estate grown grapes from our vineyards. Gently destemmed and crushed, the grapes were cold macerated for 2 days at 5°C before being inoculated with selected yeast for the alcoholic fermentation which took 3 weeks at 27°C . Gently pressed, centrifuged and then put through a full malolactic fermentation, the wine was then matured for 3 months with French oak staves.Tasting notes
