Viticulture and Vinification
Feteascã Neagrã grapes for this wine come from special green harvested- yield-reduced vines. Early in the season, workers go through the vineyards and individually cut a percentage of the grapes from the vine and throw them on the vineyard floor. This process is more painful for the viticulturist than the grape vine, which benefits by being able to put more of its resources into the remaining grapes, to give riper and develop more flavour. In the winery the grapes are treated to the same fermentation on-skins process, with controlled temperatures around 28°C and regulated pump overs while on skins to ensure good mixing/fruit extraction.Tasting notes
Violet red (typical for this variety), good limpidity. Strong aromas of fruits (sour cherries, currants, plums), flowers and slightly vegetal aromas. It initially resembles wet tree roots after rain and the young plants in the forest, followed by notes of fruits and flowers, with vague tints of vanilla. Attack above average, very good acidity, a lively taste, with active, persistent tannins and integrated alcohol. Good body and taste dynamics, slightly vegetal ending interesting aftertaste for a young wine.We recommend this wine with:
Traditional Romanian dishes, aubergine salad, small and medium game cooked in the oven, pasta with prosciutto, pizza, pork, beef and duck dishes, desserts with cherries, blackberries, currants.Serving temperature: 16°C - 18°C

WINE MAKING PROCESS:Â
The grapes are sorted and de-stemmed and sent to the fermenter. The fermentation lasted several days. Vinification calls for the repeated punching down of the cap to maximize the extraction of the polyphonic compounds and colour components which will give the finished wine its distinctive style. When fermentation is over, the new wine is left in contact with the skins for a few more days to allow the alcohol to extract their finer tannins. The new wine is carefully drawn off into stainless steel vats for malolactic fermentation.
TASTING: Ruby red, with dominant aromas of red fruits. Taste of ripe black fruit, with delicate notes of vanilla, chocolate, pepper and cinnamon even in post taste. The fine structure and mild tannins make the wine easy to drink. It is recommended to be served at 15-18°C. It will be well suited with barbecue, pasta or cheese.

WINE MAKING PROCESS:Â
The grapes for this wine are hand-picked and carefully selected, removing any impurities. The cold maceration of the grapes takes between 5 and 8 days at controlled temperature of 16°C. Alcoholic fermentation (100% by the addition of selected yeasts) is controlled at 26-28°C, during 8-10 days, followed by maceration from 5 to 8 days in thermos-regulated tanks.
TASTING:
Ruby red, with dominant aromas of red fruits. Taste of ripe black fruit, with delicate notes of vanilla, chocolate, pepper and cinnamon even in post taste. The fine structure and mild tannins make the wine easy to drink. It is recommended to be served at 15-18°C. It will be well suited with barbecue, pasta or cheese.

ORIGIN: The wine is prepared entirely from grapes of Chardonnay variety coming from the Dealu Mare which is the homeland of red wines in Romania, the seventh largest country producer of grapes in the world.
WINE MAKING PROCESS: Carefully harvested, the 5 French clones of Chardonnay grapes were pressed and cold settled, with 2-3 h skin contact to extract tropical flavours and aromas. Both neutral and aromatic yeast strains were used, along with cool fermentation temperatures, which assisted in savoring the aromatics and preserving the freshness of the wine. Various parcels were left on yeast lees to undergone malolactic fermentation, while others were immediately racked. The wines were then blended and gently fined before being bottled.
TASTING: Bright pale yellow with a floral aroma and nuances of citrics. Fresh, with a good balance between the acidity and the round ness, smooth body and long aftertaste. It is recommended to be served at 6-8°C, along with fish and sea foods, Asian dishes, appetizers as well as chicken meal and white sauce plates.

Fetească Albă (or White Maiden in English) is the most widely planted white grape in Romania and regarded by many winemakers in Romania as the white indigenous grape with the most potential. Usually off dry it is capable of producing dessert wines of exceptional quality. Intensely aromatic (think Gewurztraminer), Fetească Albă is a highly perfumed wine with hints of stone peaches, apricots and a floral bouquet. The variety dates back to the 1930’s from Transylvania but now flourishes across Romania.
WINE MAKING PROCESS:Â
Ecocert certified organic crop, not using chemicals, where soil fertility is a priority and naturally stimulated to obtain the healthiest and tastiest grapes. The grapes were harvested according to the traditional method, detaching by cutting, using scissors, avoiding breaking the grapes by hand because the bunches can be crushed and some of the berries can be shaken. After the operation of detaching the grapes from the bunches, in the dehuller and crushing the grains, by pressing at 1.8 bar, the must is transferred to stainless steel tanks and is cooled to 10° for a period that can last up to 48 hours to clear the must. The fermentation temperature is between 16-18° C for 14 days. TASTING:Straw yellow with green reflections and a bouquet of green apples and autumn pears. Harmoniuous and invigorating wine, with a typical natural finesse, slightly mineral, acacia honey. It is recommended to be served at 10-12°C. A very food-friendly wine, it pairs well with poultry, seafood, creamy cheeses.

Fetească Neagră (or Black Maiden in English) is an old native variety that originates from Moldova and Muntenia and again is capable of producing some great wines of deep colour although the vine needs constant care. The later the grapes are picked the better the results and a constant trimming programme to arrest the vigour produce excellent results. Fetească Neagră is a bramble fruited red with hints of soft cherry. It can vary greatly depending on terroir and oak influence, some can be earthy while others can boast flavours of cappuccino and vanilla.
WINE MAKING PROCESS:Â
Grapes harvested during the first half of September, alcoholic fermentation occurs in vertical static stainless steel tank with automatic cap management. Skin maceration for 7 days at 27°-28°C. Pumping over few minutes every 3-4 h. Malolactic fermentation in stainless steel. 10% of the blend had been aged in Romanian oak barriques. TASTING:Intense ruby, with dominant aromas of black and red fruits (blackberries, cranberries). Full body wine, elegant with spice notes and vanilla aftertaste. It is recommended to be served at 14-16°C. It will be well suited with barbecue, pasta or cheese.

ORIGIN: Fetească Regală (or Royal Maiden in English) is the Royal grape exclusive to Romania. It is a cross between two grape varieties - Fetească Albă and Grasă de Cotnari and again originates from Transylvania. Regală has the aromatic quality of Fetească Albă but is a weightier grape with more body.
The Regală also has a citrusy edge to its character with lots of orange and lemony fruit. Fetească Regală works well with oak and can produce bigger wines with a slightly spicy finish.
WINE MAKING PROCESS: The harvested grapes were destemmed and given a soft pressing. The must was chilled to a temperature of 10° C to favour a natural static settling of impurities. After 48 hours the must went into stainless steel fermenting tanks, where it fermented at temperatures held to a maximum of 18° C and was then held in stainless steel tanks at a controlled temperature. The preparation of the wine for bottling in small lots helped conserve freshness and fragrance.
TASTING: Pale yellow with green tinges, this wine has a bouquet of fresh fruits, green apple in particular. Well balanced, fresh and semi-aromatic dry wine. It is recommended to be served at 8°C. Ideal with white meat dishes, fresh seafood or as an aperitif.

ORIGIN: The wine is prepared entirely from grapes of Merlot variety coming from the Dealu Mare which is the homeland of red wines in Romania, the seventh largest country producer of grapes in the world.
WINE MAKING PROCESS: The grapes were carefully selected in the vineyard and also at the cellar on sorting tables before being crushed and stalks removed. The fermentation lasted approximately ten days and was followed by an additional 10-12 days of skin contact. After being run off its skins, the wine went into largeoak barrels for the malolactic fermentation, which finished spontaneously by the end of the year. The separate lots of wine were then racked and, aged separately in barrel on the basis of the various vineyard provenances; the barrels, coopered from Hungarian and Slavonian oak, were of different capacity, 225, 5000 and 7500 litters. The total aging period lasted 10 months before bottling, and a further six month period of bottle aging preceded commercial release
TASTING: Attractive ruby red with violet iridescence. Very pleasant fruity aromas reminiscent of blueberries and blackberries. On the palate is smooth and well balanced with a savory aftertaste. It is recommended to be served at 16°C. It will be well suited to everyday easy meals, burgers, pizza, chicken with tomatoes and onion or sausages.

WINE MAKING PROCESS:Â
The grapes were harvested manually, destemmed, and the chill cooled immediately before pressing. Getting the wort was done by rapid draining from the press without maceration. The must has been statically discharged at 10° C, and then sent to controlled fermentation in stainless steel containers. The fermentation temperature was 16° C. TASTING:Pink salmon. Expressive nose, with elegant tints of pomegranate and red fruits. Complex taste, fresh, with a long and very pleasant aftertaste. It is recommended to be served at 8-10°C. A very food-friendly wine, it pairs well as an aperitif or with seafood, salads, grilled fish and chicken.

WINE MAKING PROCESS:Â
Harvested in mid-September, the grapes are destemmed and crushed. Clear fee run juice has been inoculated with selected yeast and alcoholic fermentation occurs in stainless steel during a period of 14 days at a controlled temperature of about 14 °C TASTING:Pale lemon, with intense aromas of wild grass, elderflowers and lime. Refreshing taste on the palate, with grapefruit and lime hints on the finish. It is recommended to be served at 13-14°C. Excellent as aperitif and alongside seafish dishes.

ORIGIN:Â
Tamaioasa Romaneasca, described by Jancis Robinson as the ‘frankincense grape’ due to its aroma, is one of the ancient varieties of Romania. Romanians love the versatility of the grape, it can be fermented dry which produces amazing results or up to and over 150g/l of residual sugar. A version of Muscat Blanc a petits grains, the variety naturally sweet does exceptionally well in the Nicoresti area, Moldova region.
WINE MAKING PROCESS:Â
The grapes were picked by hand, de-stemmed and then left to macerate on skins in stainless steel winemakers, at a temperature of 10° for 24 hours to extract the best possible aroma. The must extracted from the pneumatic press was clarified by gravity, in cold temperature. The clear must was fermented with selected yeasts at a temperature of 14-15° for a period of 18 days. A first fermentation took place, the coarse yeast being extracted. The wine was left at a controlled temperature of 14-16°, and batonnage was made on fine yeasts for 3 weeks. After batonnage, the wine was bentonized, filtered and prepared for bottling. TASTING:Pale yellow, with intense flavours of elderberry, peaches and ripe pears, an explosion of aromas starting from incence to pink grapefruit. It is recommended to be served at 8-10˚C. One may serve it Asian, Lebanese, Indian food.

WINE MAKING PROCESS:
Grapes were harvested on the middle of September by hand. Alcoholic fermentation in closed tanks with gentle cap irrigator, extended skin contact for 21 days. Malolactic fermentation and maturation for in Romanian oak barrels.
TASTING:
Rich in black fruits – cherries, currants and berries, intense and elegant, completed by vanilla notes; excellent length and structure. It is recommended to be served at 16-18°C, alongside with braised short ribs, mushroom stroganoff, Moroccan lamb dishes, gnocchi with beef ragu.
