Viticulture and Vinification

Central to this wine is the “cane-cut” process. Better parcels of Cabernet and Merlot grapes are left to hang on the vine until fully ripe. Then to further concentrate the flavour, they are partially dried/stressed by cutting the cane on which the bunches are born to separate the grapes from the roots of the vine. Over a period ranging from a week to 20 days (depending on the weather) the grapes begin to soften and finally to appear a little saggy. This is due to evaporative water loss which concentrates the flavour and sugars. At the same time, by some unknown process, additional flavours are formed in the grape as a slight violet-like, floral aroma. These translate into the wine and can be tasted quite strongly in the wine when young and becoming more integrated with time in bottle.

Tasting notes

Ruby red. Aromas of overly ripened fruits are revealed after aeration (sour cherries, cherries, currants and plums), on a background of raisins and Caribbean rum, vanilla san slightly caramel, with an ending of pepper. The acidity is high, fixes the aromas well and gives life to the wine with a good aging potential.

We recommend this wine with:

Pfeffersteak, fillet mignon, large and medium game, boar cooked over the embers, veal, duck, pork dishes, lamb, Mangalitsa pork, beef tartare, mouldy cheeses, desserts with cherries, blackberries, currants, chocolate mousse.

WINE MAKING PROCESS

The varieties are vinified separately according to a classic fermentation technology pumpkin in stainless steel vessels of 150 Hl at 24-26 C, for 19 days at Merlot, 23 days at Cabernet and 16 days at Feteascã Neagrã. Malolactic fermentation completed immediately after the alcoholic one. Matured for 8 months on a fine deposit yeasts in the following percentages: 30% in stainless steel pots and 70% in barique de Romanian oak in the second cycle of use.

TASTING

Intense ruby with purple hues, spicy with notes of green pepper, dried fruit. A well balanced and armonious wine, with a persistent finish. It is reccommended to be served at the temperature of 16-18°C, accompanied by red meat, venison and matured cheese.

ORIGIN

Fetească Neagră (or Black Maiden in English) is an old native variety that originates from Moldova and Muntenia and again is capable of producing some great wines of deep color although the vine needs constant care. The later the grapes are picked the better the results and a constant trimming programme to arrest the vigour produce excellent results. Fetească Neagră is a bramble fruited red with hints of soft cherry. It can vary greatly depending on terroir and oak influence, some can be earthy while others can boast flavours of cappuccino and vanilla.

WINE MAKING PROCESS

Grapes harvested manually from plantations established in 2003-2004, in third top of the slope, the slope of 25-40%, with southern exposure. 40% of the amount was vinified in concrete pots, then this amount being matured for eight months in French wooden barrels of 1-3 years, the other amount was matured in stainless steel tanks. Assembly was made after maturation.

TASTING

Clear, intense red with violet hues, intense spices aromas (black pepper), vanilla and notes of guince and ripe red fruits. Dry, full-bodied and well-balanced, with soft tannins and aromas of red fruit (blackberries and blueberries), with a persistent finish. It is reccommended to be served at the temperature of 17-18°C. One may serve it with red meat dishes (lamb, beef, venison), spicy dishes and matured cheese.

TASTING

Dark ruby in color with aromas of black fruits and strong taste of coconut and vanilla. Strong flavors and elegant tannins, round and full bodied yet easy drinking wine. Smooth and persistent aftertaste. It is recommended to be served at the temperature of 18-20°C accompanied by dishes based on pork meat, lamb, beef and grilled mushrooms.

WINE MAKING PROCESS

The grapes are hand picked at full ripeness.  Before fermentation the grapes are given 3 days cold soak on the skins at 10°C giving this wine its fruity and spicy properties. Fermentation is carried out in stainless steel tanks with recirculation, at maximum temperature of 28°C, for 20 days. 30% of the wine is placed in American oak barrels for 5 months before blended back with the rest of the wine.

TASTING

Beautiful dark purple in color with blackberry and black currant aromas and notes of spice. A mixture of fruit and black pepper on the palate, soft and well balanced wine with a long fruity aftertaste. It is recommended to be served at the temperature of 18-20°C accompanied by spicy dishes, stakes, sausages, grills and seasoned cheese.

WINE MAKING PROCESS:

After hand-harvesting at an average of 25°Brix, the grapes were desteemed and crushed. The grapes have been fermented by variety in stainless steel vertical fermenters with gentle cap irrigators, for 14-21 days. To extract rich color and soft tannin from the grape skins the fermentation vats were pumped over 5 minutes every 3 hours, daily throughout the fermentation period. Following pressing and malolactic fermentation, the wine was moved to Romanian forest oak barrels, then racked, blended with a personal fingerprint and bottled; it might require decanting with time.

TASTING:

Deep red color, with abundant bouquet of fragrant forest fruits, dark chocolate and spices hints. Three lovely varieties reunited in a complex and well structured wine, with an intense and velvety taste of ripe fruit and marmalade, vanilla and spices on the finish.

It is recommended to be served at 16-18°C, along with spicy lamb dishes, beef or venison.

Dugladze Kindzmarauli AOC

DETAILS: This wine produced since 1942, is the nation's leading semi-sweet red wine, in terms of quantity and individuality. Just one sip of our company's Kindzmarauli is enough to remember if forever. The peculiarity of soil consisting of remnant black shale plays major role in the taste. This black shale washed down by the Duruji river has a high propensity to retain heat, which by increasing the temperature of the soil also increases the sweetness of the grapes and the quality of the wine.

WINE MAKING PROCESS

We pick the selected grapes at 24-26% of sugariness and 75-8 titratable acidity. After removing the stem and de-pressing the clear juice is removed from the sediment and moved into fermentation reservoirs. We add the pure culture yeast. The fermentation proceeds at a low temperature of 18-22°C. As soon as the sugar level goes down to 7-5% during the fermentation, we cool it down to 3 degrees to stop fermentation and store it at -2-3°C degrees after filtration.

DETAILS: Kvareli wine has been produced since 1966. This wine made from selected Saperavi grapes grown in Kvareli appellation, Kakheti region is characterized by rich fruit aromas. Our Kvareli was aged in oak barrels for 1 year to become one of our company's favorable wine. 

WINE MAKING PROCESS

We pick the selected grapes at 20-22% of sugariness and 6-8 titratable acidity. After removing the stem and de-pressing. fermentation proceeds at a 23-28°C in stainless steel reservoirs. We add the pure culture yeast. Following the 12-15 day maceration, we move the wine into 300 L French oak barrels for 9-12 month ageing.
