DETAILS: 

Mukuzani has been produced since 1893, and has developed and improved throughout the decades, although one thing remains unchanged - power and harmony. We make our dry red wine with strong character from the hand sorted grapes grown in the beautiful vineyards stretched on humus carbonate skeletal soils at the height of 350-750 m.

WINE MAKING PROCESS: 

We pick the selected grapes at 20-22% of sugariness and 6-8 titratable acidity. After removing the stem and de-pressing, fermentation proceeds at a 23-28°C in stainless steel reservoirs. We add the pure culture yeast. Following the 12-15day maceration, we move the wine into 300 l French oak barrels, for 9-12month ageing. The wine is further aged in stainless steel reservoirs. The subsequent ageing takes place in the bottles.

Otskhanuri Sapere grapes are not picked until late October or even mid-November. This wine when aged in oak casks, acquires a deep and elegant aroma as well as a rich and long finish. Otkshanuri sapere is considered to be Imereti’s best variety of red grape. Our Otskhanuri Sapere is made from the grapes grown in the best vineyards of Baghdati villages, Imereti.

WINE MAKING PROCESS: 

We pick the selected grapes at 20-22% of sugariness and 6-8 titratable acidity. After removing the stem and pressing, the fermentation proceeds in oak barrels, at 23-28°C degrees of temperature. A two-year ageing continues in the oak barrels; subsequently, the wine further ages in the bottles.

WINE MAKING PROCESS: We pick the selected grapes at 20-22% of sugariness and 6-8 titratable acidity. After removing the stem and pressing, we ferment our wine at 23-28°C degrees in the Qvevri. After the fermentation is complete, we remove skin and leave the wine in Qvevri till February-March.

Fermentation proceeds at 20-24°C degrees. As soon as the fermentation is completed, it is pressed and moved into storage reservoirs.

The Negru de Dragasani grape variety was obtained at the Dragasani viticulture research station through individual selection.
